Time 10m

Number Of Ingredients 7

12 oz whipped topping
1 box pistachio pudding mix
20 oz pineapple (crushed, with the juice)
2 c marshmallows (mini, multi colored preferred)
1/2 c coconut
1/4 c pistachios (optional, crushed)
1 c mandarin oranges (drained (keep juice in case you want to thin it out later))

Steps:

  • Fold together whipped topping and pistachio pudding mix until well blended.
  • Empty can of crushed pineapple into this mixture and fold in gently until combined.
  • Gently fold in mini marshmallows, mandarin oranges, and coconut until combined.
  • Best when refrigerated for at least an hour but you could make it in the morning and serve it in the evening too easily. If you think it is a bit too thick for your liking then add back in some of the drained mandarin orange juice to loosen it up.
  • Sprinkle crushed pistachio nuts on top for garnish, can add a few marshmallows on top too to make pretty + a light sprinkle of coconut.

FLOURLESS PISTACHIO COOKIES

Flourless Pistachio Cookies image

These pistachio cookies from Jesse Szewczyk are crispy, chewy, and naturally gluten-free. They make a festive, bright-green addition to a Christmas cookie box.

Provided by Jesse Szewczyk

Yield Makes 16 cookies

Number Of Ingredients 7

2 cups (280 grams) raw or toasted unsalted pistachios (see Note)
1 cup (200 grams) granulated sugar
¾ cup (75 grams) confectioners' sugar
½ teaspoon kosher salt
¼ teaspoon ground cardamom
2 large egg whites
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 350°F and set 2 racks at the upper-middle and lower-middle positions. Line 2 baking sheets with parchment paper or nonstick baking mats.
  • In the bowl of a food processor fitted with the blade attachment, combine the pistachios, granulated sugar, confectioners' sugar, salt, and cardamom. Process until the pistachios are the texture of fine sand and there are no visible pieces of pistachio left, 60 to 90 seconds. Transfer the mixture to a large bowl and add the egg whites and vanilla extract. Mix with a rubber spatula until a thick, paste-like dough forms.
  • Using a medium 1¾-inch (#40) cookie scoop or 2 tablespoons, portion out the dough and roll into balls. (The dough will be sticky, so don't fret if they are not perfect balls.) Place the dough balls at least 3 inches apart on the prepared baking sheets (8 per sheet).
  • Bake both sheets at the same time, swapping the top sheet to the bottom rack and bottom sheet to the top midway through baking, until the tops of the cookies crack and the bottoms are just starting to brown, 12 to 14 minutes. (Don't overbake the cookies. They aren't the kind of cookie that browns that much on the top. It's best to err on the side of underbaking for this recipe.) Let the cookies cool completely on the baking sheets before removing with an offset spatula.

Tips:

  • Use fresh coconut. Fresh coconut meat is more flavorful and has a better texture than canned or shredded coconut. If you can't find fresh coconut, you can use unsweetened shredded coconut instead.
  • Toast the coconut. Toasting the coconut will bring out its flavor and give it a golden brown color. You can toast the coconut in a skillet over medium heat, or in the oven at 350 degrees Fahrenheit for 10-15 minutes.
  • Use high-quality ingredients. The better the ingredients you use, the better your ambrosia will taste. Use real vanilla extract, pure maple syrup and high-quality coconut milk.
  • Chill the ambrosia before serving. This will help the flavors to meld and the ambrosia will be more refreshing.
  • Serve the ambrosia with fresh fruit. Fresh fruit, such as berries, grapes or pineapple, will add a pop of color and flavor to your ambrosia.

Conclusion:

Foolproof Pistachio Coconut Ambrosia is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it sweet, tart, or somewhere in between, this ambrosia is sure to please everyone.
