1 1/2 lb. steak (use top sirloin or ribeye for best results, chopped into 2" pieces)
1 lb. potatoes (chopped into 1" pieces)
1 red pepper (chopped into 1" pieces)
1 small onion (chopped into 1" pieces)
3 Tbsps. olive oil
2 cloves garlic (approximately 2 tsps., crushed)
1 tsp. paprika
1 tsp. thyme
1/2 tsp. salt
1/2 tsp. pepper
2 tsp. lemon juice

Steps:

  • Cut 1 1/2 lb. steak into roughly 2-inch pieces. Dice 1 lb. potatoes, 1 red pepper, and 1 small onion into 1-inch pieces or smaller.Partially cook the potatoes by boiling them for 5 minutes on the stove or cooking for 2 minutes in a dish with some water in the microwave.
  • Mix together 3 Tbsp. oil, 2 cloves crushed garlic, 1 tsp. paprika, 1 tsp. thyme, 1/2 tsp. each salt and pepper, and 2 tsp. lemon juice. Toss the steak, potatoes, onions, and peppers in the oil mixture.
  • Cut foil squares large enough to contain and fold over the steak and potatoes mixture, then divide the mixture evenly between them.
  • Seal up the foil packs and cook on the grill for 10 minutes or in the oven at 425°F for around 20 minutes. When done cooking, open the pack and finish the steak directly on the grill or place it under the broiler for a couple of minutes to brown. Serve in the pack or on a plate.

1 (8 ounce) package beefy onion soup mix or 1 (8 ounce) package savory herb with garlic soup mix
3 potatoes, peeled and sliced

  • Preheat oven to 350°F (175°C)

3 carrots (halved lengthwise and cut into quarters)
2 ribs celery (cut into sticks)
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon paprika

Steps:

  • Gather the ingredients. Preheat the oven to 400 F.
  • Tear off a 2- to 3-foot piece of 18-inch-wide heavy-duty aluminum foil.

3 pounds red potatoes, cut into 1/2-inch cubes

This is a very comforting, hearty meal and is so easy to make. My husband's favorite part is the beefy gravy. Note: A few people have commented on the vegetables being undercooked. In response, I have adjusted the cooking time for this recipe. Also, one person commented on the meat being tough. This is probably because cube steak is generally a cheap cut of beef. For better results, I have used and would suggest flank steak.

4 cube steaks (or one 2-lb. flank steak)
1 (10 ounce) can condensed cream of mushroom soup
1/4 cup milk
2 tablespoons dry onion soup mix
1 1/2 cups red potatoes, cubed into 3/4-inch pieces
2 stalks celery, sliced cross-wise into 1/2-inch pieces
1 cup baby carrots (or 1 cup large carrots, sliced)
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees.
  • Line a 10 x 13-inch cake pan with aluminum foil, leaving enough extra foil on the long and short sides of the pan to easily seal into a foil packet later.
  • Place cube steaks in aluminum foil in one layer.
  • Combine condensed soup, milk and dry soup mix thoroughly and spread mixture over the meat.
  • Arrange cubed (3/4-inch) potatoes (with or without skin), sliced celery (1/2-inch pieces) and baby carrots evenly over soup layer.
  • Sprinkle 1 tbs. water over all vegetables.
  • Seal the foil tightly, making sure that steam will not escape the packet.
  • Bake for 1 hour and 15 minutes.
  • Remove pan from the oven and allow to sit for 5 minutes before opening foil packet. If vegetables are not completely cooked, re-seal the packet and bake for another 15-20 minutes.
  • Serve immediately.
  • Notes: Instead of cubed steak, I've also used flank steak.

1 tsp garlic powder
1/2 tsp black pepper
1 large onion, sliced
1 bell pepper, sliced
1 carrot, shredded
1 celery ribs, bias cut 1 inch
1 Tbsp worcestershire sauce

Steps:

  • 1. Trim the ligament and fat from the round steak.
  • 2. Place double layer of aluminum foil in bottom of shallow baking pan (9x15x2 or thereabouts in size).
  • 3. Place meat on foil.
  • 4. Spread unmelted butter on top of meat, season with garlic powder, pepper and half of worcestershire sauce or powder.
  • 5. Pile vegetables on top.
  • 6. Top with remaining worcestershire.
  • 7. Cover with 2 additional layers of foil, wrap tightly to keep steam and juices inside.
  • 8. Bake 2 1/2 hours in 350 oven.
