3 scallions, trimmed, sliced
1 (16-ounce) package frozen shredded hash brown potatoes, defrosted
12 ounces cooked breakfast sausages (about 16 sausage links), cut into ¾" pieces
¼ cup olive oil
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper, plus more to taste
3 (packed) cups baby spinach
6 large eggs
½ cup shredded cheddar (optional)

Steps:

  • Cut 12 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 6 stacks. Line top pieces of foil with parchment paper cut to the same size.

IVO'S FOIL BARBECUED POTATOES WITH ROSEMARY - BBQ

Ivo's Foil Barbecued Potatoes With Rosemary - BBQ image

Make and share this Ivo's Foil Barbecued Potatoes With Rosemary - BBQ recipe from Food.com.

Provided by Sandi From CA

Categories     Potato

Time 35m

Yield 2-4 serving(s)

Number Of Ingredients 6

2 potatoes, scrubbed well
1 garlic clove, minced
1 tablespoon coarse salt
1 teaspoon fresh rosemary, chopped
1 tablespoon olive oil
1 sheet aluminum foil, about 1 1/2 feet long

Steps:

  • Slice potatoes into 1" wide x 1/8" thick slabs.
  • Mix remaining ingredients in a bowl, add potatoes and toss to coat.
  • Place potato mixture onto ½ of the foil; fold over other half and seal edges by pinching halves together to form a packet. Slit the top of the foil packet several times to vent.
  • Place the packet on the grill when the coal is at its hottest and grill for 30 minutes. At about the halfway mark, you may want to open the foil and stir the potatoes, but be careful not to let the oil run out (i.e. don't simply turn packet over) or you will cause fire, soot and general mayhem. Not good. But the potatoes are and you don't want to have to share them with the fire department, so be careful.
  • Eat. Burp. Sigh.

Tips:

  • Choose the right type of potato: Russet potatoes are the best choice for baking in foil, as they have a high starch content that helps them to become fluffy and tender.
  • Scrub the potatoes thoroughly before baking: This will help to remove any dirt or debris from the skin.
  • Prick the potatoes with a fork before baking: This will help the steam to escape and prevent the potatoes from bursting.
  • Wrap the potatoes tightly in foil: This will help to keep the moisture in and prevent the potatoes from drying out.
