This version of the classic is easy to make while remaining authentic and true to the original. This may be the fastest yeast bread you make; it takes only one hour from conception to completion. Romano or Asiago cheese are nice to use instead of Parmesan cheese.

Time 1h10m

Yield 12

Number Of Ingredients 11

1 tablespoon honey
2 cups warm water
1 tablespoon active dry yeast
1 tablespoon kosher salt
1 tablespoon extra-virgin olive oil
½ cup diced onion
5 cups all-purpose flour, or as needed
3 tablespoons extra-virgin olive oil
2 tablespoons fresh chopped rosemary
¼ cup freshly grated Parmesan cheese
1 tablespoon kosher salt

Steps:

  • Dissolve honey in the warm water in a large bowl, then sprinkle yeast over the top. Let stand for 5 minutes until the yeast softens and begins to foam. Stir in 1 tablespoon of salt, 1 tablespoon olive oil, onions, and 5 cups of flour until the dough comes together. Knead on a well floured surface until smooth and elastic, about 5 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 20 minutes.
  • Preheat oven to 415 degrees F (215 degrees C).
  • Place dough onto oiled baking sheet, and flatten to cover the whole sheet evenly. Use the tips of your fingers to make indentations all over the dough spaced about 1 inch apart. Drizzle the focaccia with 3 tablespoons olive oil, then sprinkle rosemary, Parmesan cheese, and remaining 1 tablespoon of kosher salt over the top. Let rise for 10 minutes
  • Bake in preheated oven 20 minutes until golden brown.

Time 1h50m

Number Of Ingredients 10

1 c hot water (80°f)
2 Tbsp olive oil
3 c all purpose flour, sifted
2 Tbsp each of powdered milk and sugar
1 tsp coarse salt
1 tsp granulated garlic
2 tsp active dry yeast
1-2 jalapeno, fresh, cut into rings
1/2 c diced sweet onion
2 c cheddar cheese, grated

Steps:

  • 1. Grate cheese, dice onions, and slice jalapeno into rings, mix together and set aside.
  • 2. Sift 3 c of flour into mixing bowl. Add sugar, salt, granulated garlic and powdered milk. Mix together.
  • 3. Place water and oil in bread machine pan. Add flour mix, make an indention in the center of flour and place in yeast.
  • 4. Place machine on DOUGH ONLY cycle. Once dough has formed a ball, start putting in the cheese mixture a little at a time until it is all mixed in with the dough. You may need to add a little flour if the dough seems too moist. The cheese breaks down and adds moisture.
  • 5. Once it's all incorporated, let it finish kneading and rising.
  • 6. After dough has risen and beeper sounds, remove and place in a oil sprayed 11x13 baking dish. Spread out dough with your hands, and poke your fingertips into the dough to make little "dimples". Cover with a towel and let rise to about double in size.
  • 7. Once risen, bake at 400° for 20 minutes on middle rack of oven. Enjoy!

Tips:

  • Use a kitchen scale to measure your ingredients for the most accurate results.
  • If you don't have a stand mixer, you can mix the dough by hand. Just be sure to knead it for at least 10 minutes, until it is smooth and elastic.
  • Let the dough rise in a warm place until it has doubled in size. This usually takes about 1-2 hours.
  • When dimpling the dough, be sure to press your fingers all the way to the bottom of the pan. This will help to create a nice, even crust.
  • Bake the focaccia until it is golden brown and cooked through. This usually takes about 20-25 minutes.
  • Let the focaccia cool for a few minutes before slicing and serving.

Conclusion:

Focaccia bread is a delicious and versatile bread that can be enjoyed in many different ways. It can be served as an appetizer, a side dish, or even a main course. It is also a great bread to use for sandwiches, paninis, and bruschetta. With just a few simple ingredients and a little bit of time, you can make your own delicious focaccia bread at home.
