1 can (4-1/4 ounces) chopped ripe olives, drained
1 focaccia bread (about 12 ounces), split
4 romaine leaves
1/4 pound shaved deli ham
1 medium sweet red pepper, thinly sliced into rings
1/4 pound shaved deli turkey
1 large tomato, thinly sliced
1/4 pound thinly sliced hard salami
1 jar (7 ounces) roasted sweet red peppers, drained
4 to 6 slices provolone cheese

Steps:

1 package (8 ounces) cream cheese, softened
2 tablespoons sour cream
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
2 cloves garlic, finely chopped, or 1/4 teaspoon garlic powder
1 round focaccia bread (12 inches in diameter)
30 thin slices cooked roast beef (20 ounces)
6 slices (1 1/2 ounces each) mozzarella cheese
12 slices tomato
Red onion rings, if desired
Fresh basil leaves, if desired

Steps:

  • In small bowl, cover tomatoes with boiling water. Let stand 30 minutes; drain. Chop tomatoes. In small bowl, mix all remaining spread ingredients; stir in tomatoes. Cover and refrigerate 1 hour.

1/2 cup prepared pesto sauce
1/2 cup sweet onions or 1/2 cup red onion, finely chopped
1/3 cup sun-dried tomato packed in oil, chopped
3 tablespoons mayonnaise (can use reduced fat)
2 teaspoonlemons, zest
1/4 teaspoon salt

2 tablespoons prepared brown mustard
3 skinless, boneless chicken breast halves
2 cups shredded mozzarella cheese
2 cups broccoli florets
1 loaf focaccia bread, cut in half horizontally

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spread brown mustard onto the chicken breasts to coat, and place them in a baking dish. Bake for about 30 minutes in the preheated oven, or until cooked through.
  • Meanwhile, bring 1/2 inch of water to a boil in a small saucepan with a lid. Add the broccoli, and cook for 7 minutes, or until tender but still bright green. Drain, and set aside.

My recipe source here is the Alaska Seafood Marketing Institute who acknowledged Edwina Gadsby of Great Falls, Montana. This recipe was 1 of 6 winners of the "LUV SALMON SO MUCH" recipe contest & it's a winner in my book too. This makes a very good brunch or luncheon item, but is also esp good for TO GO occasions because of its easy portability & the fact the sandwinches can be made up to 6 hrs in advance. Enjoy!

Eight 4-inch rosemary stalks

  • In a large bowl, combine all contents of salad kit and chicken strips. Toss to combine.
  • Cut focaccia loaf in half horizontally. Fill focaccia bread with chicken Caesar salad. Cut focaccia sandwich into 8 portions.

1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon italian seasoning
1/4 cup parmesan cheese, shredded
1 (6 1/2 ounce) container spreadable cheese with garlic and herbs, softened
2 roma tomatoes, medium, thinly sliced
1 ounce fresh basil leaf, stems removed
1/2 lb deli smoked turkey, thinly sliced

Steps:

  • Heat oven to 400°F.
  • Grease large cookie sheet with cooking spray.
  • Unroll pizza crust dough nad press into 12 x 8 inch rectangle on cookie sheet.
  • With end of handle of wooden spoon, press indentations in top, about 1 inch apart.
  • Brush dough with oil.
  • Sprinkle with garlic powder, italian seasoning and parm cheese.
  • Bake until golden brown (12 minutes).
  • Cool off and cut in half horizontally.
  • Spread cut side of bottom of focaccia with spreadable cheese.
  • Top with single layer of tomatoes and basil.
  • Layer turkey evenly over basil.
  • Place top of focaccia cut side down, over turkey and press.
  • Pierce through all layers with toothpicks, placing them every 1 1/2 inches over focaccia.
  • With long serrated knife, cut between toothpicks into squares.
