Focaccia is one of my favorite bread recipes. It's one of the least labor-intensive since there isn't any kneading. The dough is very wet, which is perfect for a tender, yet chewy, bread with a very distinct salt bite. -James Schend, Taste of Home Deputy Editor

Time 45m

Yield 2 dozen.

Number Of Ingredients 7

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°), divided

3 cups (375 grams) all-purpose flour
1/4 cup plus 3 tablespoons olive oil, divided
3/4 teaspoon kosher salt
1 teaspoon flaky sea salt, optional

Steps:

  • In a large bowl, dissolve yeast in 1/2-cup warm water and honey; let stand for 5 minutes. Add flour, 1/4 cup oil, salt and remaining 3/4-cup water; mixing until smooth (dough will be wet). Scrape the sides of the bowl clean; cover and let rise in a warm place until doubled, about 45 minutes., Preheat oven to 425°. Brush a 13x9-in. baking pan with 1 tablespoon oil. Tips:

  • Use a food processor or stand mixer to make the dough, as this will save time and effort, and result in a more evenly mixed dough.
  • If you don't have a food processor or stand mixer, you can make the dough by hand. Just be sure to knead it for at least 10 minutes, or until it is smooth and elastic.
  • Let the dough rise in a warm place for at least 1 hour, or until it has doubled in size. This will help the bread to be light and airy.
  • When the dough has risen, punch it down and divide it into 12 equal pieces. Shape each piece into a ball and place them in a greased 9x13 inch baking dish.
  • Let the dough rise again in a warm place for 30 minutes, or until it has almost doubled in size.
  • Before baking, dimple the bread with your fingers. This will help the bread to rise evenly.
  • Bake the bread in a preheated oven at 400 degrees Fahrenheit for 20-25 minutes, or until it is golden brown and cooked through.
  • Let the bread cool for a few minutes before slicing and serving.

They are perfect for dipping in olive oil, balsamic vinegar, or your favorite soup or stew. These bread squares are a great way to use up leftover dough, and they can also be made ahead of time and frozen for later.
