FLUFFY CREAMY CREAM CHEESE FROSTING (LOWER FAT/CAL)
I'm a cream cheese frosting lover and have been looking for the perfect lower fat/cal frosting that doesn't taste low fat. After trying many recipes and experimenting on my own I think I've finally come across one that fits the bill. It should come out nice and fluffy and not too sweet (I don't care for overly sweet frosting) although one can always add more sugar. I use two packages of Neufchatel Cheese (1/3 less fat cream cheese). It would probably also be good with one package Neufchatel cheese and one light cream cheese. I wouldn't suggest using both light cream cheese, and certainly would not suggest fat free cream cheese. This recipe yielded enough to frost two 8x11 sheet cakes very thickly.

- In another bowl beat the cream cheese with vanilla until smooth; add in pudding and mix to combine well.
- Fold in Cool Whip starting with a quarter of the container adding in more until you achieve desired consistany and taste.
Tips:
- Use a stand mixer or electric hand mixer to whip the frosting until it is light and fluffy.
- For a richer frosting, use full-fat cream cheese instead of low-fat cream cheese.
- Add a teaspoon of vanilla extract or almond extract for extra flavor.
- If the frosting is too thick, add a tablespoon of milk or cream until it reaches the desired consistency.
- If the frosting is too thin, add more confectioners' sugar until it is thick enough to spread.
- Store the frosting in an airtight container in the refrigerator for up to 2 weeks.
Conclusion:
This low-fat cream cheese frosting is a delicious and easy-to-make frosting that is perfect for cakes, cupcakes, and other desserts. It is light and fluffy, with a tangy and sweet flavor. This frosting is also a good source of calcium and protein.
