FLUFFY CORNBREAD

Time 35m

Yield 9 squares, 9 serving(s)

Number Of Ingredients 9

1 cup milk
1 teaspoon shortening
1/4 cup butter, melted
1 large egg, separated
1 1/4 cups yellow cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400³F.
  • Grease bottom square pan, 8x8x2 inches, with shortening.
  • Beat milk, butter and egg yolk in large bowl with hand beater or wire whisk. Clean beater and whip egg white in a small bowl till stiff. Set aside.
  • Stir remaining ingredients into milk mixture all at once just until flour is moistened (batter will be lumpy). Gently fold in beaten egg white.
  • Pour into pan.
  • Bake 20 minutes or until golden brown and toothpick inserted in center comes out clean.
  • Serve warm.

Tips:

  • Use the Right Cornmeal: For the best texture and flavor, use a high-quality stone-ground cornmeal. This type of cornmeal has a coarser texture than regular cornmeal, which will give your cornbread a more rustic and flavorful crumb.
  • Measure Your Ingredients Accurately: This is especially important for baking recipes, as even small variations in ingredient amounts can affect the outcome. Use a kitchen scale to measure your ingredients for the most accurate results.
  • Don't Overmix the Batter: Overmixing the batter will make your cornbread tough and dense. Mix the batter just until the ingredients are combined, then stop.
  • Preheat Your Oven: Always preheat your oven before baking cornbread. This will help the cornbread rise evenly and prevent it from becoming dense and gummy.
  • Use a Cast Iron Skillet: If you have one, use a cast iron skillet to bake your cornbread. Cast iron skillets distribute heat evenly, which will give your cornbread a crispy crust and a moist interior.

Conclusion:

Cornbread is a classic Southern side dish that is easy to make and always a crowd-pleaser. With its simple ingredients and versatile flavor, cornbread can be enjoyed on its own, with butter and honey, or as a side dish to your favorite meal. Whether you're a beginner or an experienced baker, this fluffy cornbread recipe is sure to become a staple in your kitchen.
