2 tablespoons butter
2 tablespoons finely chopped onion
1 tablespoon finely chopped celery
1 tablespoon finely chopped green pepper
8 uncooked medium shrimp, peeled and deveined
2 tablespoons beef broth
1/2 teaspoon diced pimientos, drained
1/2 teaspoon Worcestershire sauce
1/4 teaspoon dill weed
1/4 teaspoon minced chives
Dash salt
Dash cayenne pepper
1/2 cup soft bread crumbs
FISH:
2 flounder fillets (3 ounces each)
2 tablespoons butter, melted
2 teaspoons lemon juice
1/2 teaspoon minced fresh parsley
Dash paprika
Salt and pepper to taste

Steps:

  • In a large skillet, melt butter. Add the onion, celery and green pepper; saute until tender. Add shrimp; cook and stir until shrimp turn pink. Add the broth, pimientos, Worcestershire sauce, dill, chives, salt and cayenne; heat through. Remove from the heat; stir in bread crumbs., Spoon about 1/2 cup stuffing onto each fillet; roll up. 2 tablespoons unsalted butter
1 medium onion, chopped
1/2 teaspoon kosher salt, plus extra for the sweat and for seasoning fillets
1 clove garlic, minced
1 (10-ounce package) frozen chopped spinach, thawed and squeezed dry
1 lemon, zested
1/4 teaspoon freshly ground black pepper, plus extra for seasoning fillets
2 tablespoons chopped fresh parsley leaves
1 cup heavy cream
1/4 cup white wine
10 ounces grated Cheddar
1 1/2 to 2 pounds flounder fillets
3 cups leftover cooked rice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium saute pan over low heat, melt the butter; add the onion and a pinch of salt and sweat until translucent. Add the garlic and continue to cook for another minute. Add the spinach and lemon zest and cook until just heated through. Season with the salt and pepper, add the parsley, and stir to combine. Remove from the heat and keep warm.

8 ounces baby shrimp (cooked)
1 egg (slightly beaten)
1/2 cup skim milk
1 tablespoon butter
1 teaspoon chives
2 teaspoons flour
16 ounces flounder fillets
2 tablespoons dry sherry
1 dash salt
1 dash white pepper

Steps:

  • Preheat oven to 300.
  • Mix shrimp, egg, and 1/4 cup milk.
  • Melt butter skillet.
  • Saute chives for 1 minute.
  • Add flour and cook until bubbly.

1 tablespoon olive oil
2 tablespoons butter
1 small onion, chopped fine
2 garlic cloves, minced
2 stalks celery, chopped fine
1/2 red bell pepper, chopped fine
4 ounces shrimp, chopped fine (1/2 cup)
1/2 teaspoon salt (to taste)
1 teaspoon Old Bay Seasoning, to taste or 1/2 teaspoon cayenne
6 ounces lump crabmeat (or more if desired)
3 -4 tablespoons Italian seasoned breadcrumbs, more as needed
1 lb flounder (8 large fillets)
4 tablespoons butter, melted
3 tablespoons lemon juice
kosher salt, to taste
black pepper, to taste
2 teaspoons paprika
1 lemon, cut into wedges for garnish

Steps:

  • Preheat the oven to 400°F In a sauté pan, heat the olive oil and butter. Add the onions, garlic, celery, and peppers. Sauté for 2 minutes, or until the vegetables are wilted.
  • Add the shrimp and season with salt and Old Bay (to taste). Sauté for 2 minutes. Remove from the heat and place mixture into a bowl. Gently stir in the crabmeat, then the bread crumbs a little at a time, adding more as needed to gently bind. Set aside to cool.

  • Place the pan in the oven and bake for 20-25 minutes until fish is cooked thru. Remove the fish from the oven and serve with lemon wedges.
