4 boneless skinless chicken breasts
Salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons (3/4 stick) unsalted butter
2 tablespoons shallots, sliced
1 tablespoon chopped garlic
1 1/2 cups dry white wine
1 cup whipping cream
1 tablespoon chopped fresh Italian parsley
2 (10-ounce) packages frozen cut-leaf spinach, thawed, drained

Steps:

  • Sprinkle the chicken with salt and pepper. Dredge the chicken in the flour to coat lightly. Shake off any excess flour. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the chicken and cook until brown, about 5 minutes per side. Transfer the chicken to a plate and tent with foil to keep it warm.
  • Melt 2 tablespoons of butter in the same skillet over medium heat.   • Meanwhile, melt the remaining 2 tablespoons of butter in another large skillet over medium heat. Add the spinach and saute until heated through. Season the spinach, to taste, with salt and pepper. Arrange the spinach over a platter. Place the chicken atop the spinach. Pour the sauce over and serve.

1 (10 ounce) can white chicken meat, drained and flaked
1/2 cup red bell pepper, chopped
1 (8 ounce) can water chestnuts, chopped
1 (10 ounce) package frozen chopped spinach, thawed and well drained
1 cup shredded cheddar cheese
1/3 cup mayonnaise
1 teaspoon lemon zest
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
2 (8 ounce) packages refrigerated crescent dinner rolls

Steps:

  • Preheat oven to 375°F In large bowl flake chicken. Chop bell pepper and water chestnuts. Add to chicken along with spinach, cheese, mayonnaise, lemon zest, salt and nutmeg; mix well. Unroll crescent dough; separate into 16 triangles. Arrange triangles in a circle on baking sheet with wide ends of the triangles overlapping in the center and points toward the outside. (There should be a 5-inch-diameter opening in the center.) Scoop chicken mixture evenly onto widest end of each triangle. Bring outside points of triangles up over filling and tuck under wide ends of dough at the center of ring. (Filling will not be completely covered.) Bake 20-25 minutes or until golden brown.

1/3 cup mayonnaise
1 teaspoon lemon zest
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
2 (8 ounce) packages refrigerated crescent dinner rolls

Steps:

  • 1. Preheat oven to 375 degrees. In a 2 Qt bowl, flake chicken until finely shredded. Chop bell pepper. Add to chicken along with spinach, cheese, mayonnaise, lemon zest, salt and nutmeg; mix well.
  • 2. Unroll crescent dough; separate into 16 triangles. Arrange triangles in circle on 13" round baking pan with wide ends of triangles overlapping in the center and points toward the outside.
  • 3. Using a spoon/medium cookie dough scoop, scoop chicken mixture evenly onto widest end of each triangle. Bring outside points of triangles up over filling and tuck under wide ends of dough at center of ring. ~~~~Filling will not be completely covered~~~~~~~~~.
