1 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
1/8 tsp salt (omit if using salted butter)
1 large egg, separated
1 c buttermilk
1 Tbsp packed brown sugar or raw sugar
2 Tbsp canola oil or melted butter
1 tsp vanilla

Steps:

  • 2. Add wet ingredients to dry ingredients except for egg white.
  • 3. Whip egg white until fluffy.
  • 4. Fold into batter.
  • 5. Cook on a hot griddle on both sides until deep golden brown. Yield (8) 4-inch pancakes

Tips:

* **Use ripe bananas**. Overripe bananas are naturally sweeter and will make your pancakes extra fluffy. * **Mash the bananas well**. This will help to incorporate them evenly into the batter and prevent them from clumping. * **Don't overmix the batter**. Overmixing can make your pancakes tough. Mix just until the ingredients are combined. * **Cook the pancakes over medium heat**. This will help to prevent them from burning. * **Flip the pancakes only once**. Flipping them too often can make them tough. * **Serve the pancakes immediately**. Flaxseed pancakes are best served fresh and warm.

Conclusion:

Flaxseed oatmeal pancakes are a delicious and healthy way to start your day. They are packed with fiber, protein, and omega-3 fatty acids. They are also easy to make and can be customized to your liking. Try adding different fruits, nuts, or seeds to the batter for a variety of flavors and textures.
