1 large egg, lightly beaten
1 tablespoon unsalted butter, melted, plus more for skillet and serving
1 cup fresh or frozen blueberries
Maple syrup, for serving

Steps:

  • In a large bowl, whisk together flour, flaxseed, sugar, baking powder, baking soda, and salt. Add buttermilk, egg, and butter and whisk until just moistened (batter should have some lumps; do not overmix). Fold in blueberries.

1/4 cup ground flax seeds
3 tablespoons sugar
4 teaspoons baking powder

Steps:

  • Whisk first six ingredient in a large bowl.

I quadruple the recipe and freeze what we don't eat. They reheat great. NOTE: These make a thin, nearly crepe-like pancake. If you like a thicker pancake, use less liquid.

1/2 cup all-bran cereal (not All-Bran-it's too heavy(I've found Trader Joe's high-fiber cereal works best)

1/3 cup powdered milk
2 tablespoons canola oil
