OAT, FLAX 'N BANANA BREAD

Oat, Flax 'n Banana Bread image

This is the Banana bread I make for days I skip breakfast, or want I something kinda sweet before bed. I really came up with this through trial and error. I wanted a banana bread that was healthy enough that I didn't hate myself when I went back for another slice. The oat flour and ground flax I use are the Bob's Red Mill brand. This can easily be made into muffins.

Healthier Banana Bread (Lower Fat, Flax, Ww Flour, Less Sugar) image

I am trying to gradually shift my family to healthier foods. Rather than going to no fat, all flax and no added sweetener--here is my compromise.

Provided by fmikef

Categories     Quick Breads

Time 1h15m

Yield 2 Loaves, 24 serving(s)

Number Of Ingredients 9

1 cup brown sugar
4 -6 bananas (dark)
4 cups whole wheat flour (pastry flour is fine)
1 1/2 cups ground flax seeds
1 teaspoon salt
2 eggs (or egg substitute)
1/2 cup oil
2 teaspoons baking soda
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350°F.
  • Spray 2 loaf pans with non-stick spray.
  • Mash bananas.
  • Combine sugar, oil and egg--mixing until creamy.
  • Blend in mashed bananas.
  • In a separate bowl, combine whole wheat flour, ground flax seed, salt, baking soda. (Add the nuts to the dry ingredients at this point). Combine wet and dry ingredients, but do not overmix.
  • Pour batter into loaf pans and bake approximately 1 hour-testing with a toothpick at the hour, and then as needed.
  • Note: Because the batter is dense you will need to watch the baking time to be sure it is adequate--don't only go by color, flax seed will add darkness.

EASY LOWER SUGAR BANANA FLAX BREAD

Easy Lower Sugar Banana Flax Bread image

This is more of a moderated version of a baking mix banana bread, made with less sugar and the addition of flax seeds for an omega boost! I picked the recipe up off a website somewhere and wrote it down on a note pad. I altered the sugar and honey amounts, and added the flax.

Provided by mcclure2000

Categories     Quick Breads

Time 1h10m

Yield 1 loaf

Number Of Ingredients 9

2 1/2 cups baking mix (bisquick)
1/4 cup vegetable oil
3 eggs
1 tablespoon vanilla
1 pinch cinnamon
1/4 cup sugar
1/4 cup honey
2 tablespoons flax seeds
3 bananas, very ripe (almost black on the peel)

Steps:

  • Grease a loaf pan with a margarine butter substitute blend.
  • Preheat oven to 350.
  • Combine all ingredients in bowl, and stir well to combine.
  • Pour into loaf pan, bake 55 minutes, or until toothpick inserted comes out clean.

Nutrition Facts : Calories 2979.8, Fat 127.9, SaturatedFat 25.6, Cholesterol 564.4, Sodium 3466.2, Carbohydrate 412, Fiber 21.8, Sugar 202.6, Protein 52.3

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be.
  • Don't overmix the batter: Overmixing the batter will make your banana bread tough. Mix just until the ingredients are combined.
  • Let the batter rest for a few minutes before baking: This will allow the gluten in the flour to relax, which will result in a more tender banana bread.
  • Bake the banana bread at 350 degrees Fahrenheit: This is the ideal temperature for baking banana bread. If you bake it at a higher temperature, the outside of the bread will be overcooked before the inside is done.
  • Check the banana bread for doneness with a toothpick: Insert a toothpick into the center of the bread. If it comes out clean, the bread is done. If it comes out with batter or crumbs attached, the bread needs to bake for a few more minutes.

Conclusion:

Flax banana bread is a delicious and healthy way to enjoy bananas. It's easy to make and can be enjoyed for breakfast, lunch, or a snack. With its moist texture and sweet flavor, flax banana bread is sure to be a hit with everyone who tries it.
