Time 40m

Number Of Ingredients 10

1 1/2 cups chicken (cooked, chopped)
3 tablespoons onion (red or yellow; finely chopped)
1/4 cup celery (finely chopped)
1 large egg ( hard-boiled ; chopped)
1/3 to 1/2 cup mayonnaise (as needed to moisten the salad)
1 tablespoon dill pickle relish
1/4 teaspoon salt (or seasoned salt to taste)
1/8 teaspoon black pepper (freshly ground)
8 slices bread
Lettuce

Steps:

  • To bake boneless chicken breasts, preheat the oven to 350 F. Line a baking pan with foil.
  • Arrange the chicken on the pan and season lightly with salt and freshly ground black pepper.
  • Bake until the chicken registers 165 F on a food thermometer. Depending on the size and thickness of the boneless chicken breasts, it will take 22 to 30 minutes. Let cool and chop.
  • To poach boneless chicken breasts, place chicken in a single layer in a deep skillet or sauté pan.
  • If desired, add some herbs and chopped aromatic vegetables, such as onions, garlic, or carrots. Cover the chicken with water (about 1/2 to 1 inch above the chicken breasts) and bring to a boil over high heat.
  • Reduce the heat to a simmer, cover the pan, and continue cooking for 8 to 15 minutes, depending on the size of the chicken pieces.
  • Check the chicken breasts with a food thermometer to ensure they are done to at least 165 F. Let cool and chop.
  • Once you've cooked the chicken, gather all of the ingredients.
  • In a medium bowl, combine the cooked, chopped chicken, onion, celery, and egg. Stir to combine.
  • Add 1/3 cup of mayonnaise, the dill pickle relish, salt, and pepper to the chicken. Stir to blend well.
  • Add more mayonnaise to moisten, if desired.
  • Serve on bread with lettuce and enjoy.

Time 20m

Yield 10-12 serving(s)

Number Of Ingredients 5

4 (12 1/2 ounce) cans chicken
1 large green apple
1 lb grapes
1 1/2 cups mayonnaise
10 croissants

Steps:

  • Drain chicken and dump contents in bowl.
  • I use a potato peeler and peal my apple. Sometimes I just scrape the whole apple and chop the scrapings. Or you could just finely chop the whole apple.
  • I usually cut the grapes in half with a knife. or I take a grape between my thumb and index finger and smash it and it break into 2 pieces. I do this to over half the bag. That works 2!
  • Add the mayo and stir all together.
  • Cut croissants in half and spoon mixture on.
  • This looks very pretty and elegant!

Tips:

  • Use high-quality mayonnaise. This is the base of the chicken salad, so it's important to use a good one. Look for a mayonnaise that is made with real eggs and oil, and avoid brands that contain a lot of sugar or fillers.
  • Shred the chicken yourself. This will give you a more even texture than if you use pre-shredded chicken. You can use a food processor or a knife to shred the chicken.
  • Season the chicken salad well. This is a key step that will bring out the flavor of the chicken salad. Use a variety of seasonings, such as salt, pepper, garlic powder, and onion powder.
  • Add some crunch. This will help to balance out the creaminess of the chicken salad. You can add chopped celery, carrots, or almonds.
  • Serve the chicken salad on a variety of breads. This is a versatile dish that can be served on sandwiches, wraps, or crackers.

Conclusion:

Chicken salad is a delicious and easy-to-make dish that is perfect for a quick lunch or dinner. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying meal that the whole family will enjoy. So next time you're looking for a quick and easy meal, give chicken salad a try.
