My family is one of several pork producers in this area, so I'm always looking for pork recipes. This one's easy to make because you don't have to brown the meat before baking. That's one of the reasons I like it so much.

6 pork loin chops (about 3/4 inch thick)
1/2 cup pineapple juice
1/2 cup ketchup
2 tablespoons honey
2 tablespoons white wine vinegar
1-1/2 teaspoons Dijon mustard
1/4 teaspoon salt
4 teaspoons cornstarch
2 tablespoons water

Steps:

  • Place pork chops in a 13x9-in. baking dish. In a bowl, combine pineapple juice, ketchup, honey, vinegar, mustard and salt. Pour over the chops. Cover and bake at 350° for 30 minutes. Uncover and bake about 30 minutes longer or until the meat is tender. Remove chops to a serving platter and keep warm. Strain pan juices into a saucepan. Combine cornstarch and water; add to pan juices. Cook and stir until thickened and bubbly; cook and stir 2 minutes longer. Serve immediately over chops.

6 boneless pork loin chops (4 ounces each)
3/4 teaspoon pepper
1/2 cup water
1/3 cup cider vinegar
1/4 cup packed brown sugar
2 tablespoons reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • Sprinkle pork chops with pepper. In a large skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned. 4 (4-ounce) boneless pork loin chops
1 cup apricot preserves
2 tablespoons reduced-sodium soy sauce
1 teaspoon minced fresh ginger
1/4 cup chopped scallions

  • Heat oil in a large skillet over medium-high heat. Season pork chops all over with salt and black pepper and add to hot pan. Cook chops 2 minutes per side, until golden brown. 1 teaspoon salt
1 teaspoon corn flour
1 egg
1 cup corn flour
2 ½ cups oil
2 tablespoons oil
2 teaspoons garlic, crushed
½ green bell pepper, chopped
½ red bell pepper, chopped
⅔ cup pineapple
¼ cup white caster sugar
¼ cup rice vinegar
2 tablespoons ketchup

Steps:

  • In a bowl, combine all marinade ingredients with the pork. Cover and leave to marinade in the fridge 20 minutes.
  • Place the corn flour in a large bowl and toss the marinated pork chunks until liberally coated.
  • In a medium-sized saucepan, heat the oil to 350˚F (180°C).
  • Deep fry the pork pieces for about 3-4 minutes until the coating is golden brown and the pork is cooked throughout. Set aside.

1/4 teaspoon pepper
2 tablespoons low sodium soy sauce
1 1/2 teaspoons sugar
1 lb of 1 inch thick boneless pork chop, trimmed of fat and cut into one inch cubes
2 tablespoons pineapple juice
1 tablespoon ketchup
1/2 teaspoon white vinegar
3 tablespoons canola oil
1 red onion, peeled trimmed and cut into one inch cubes
2 red bell peppers, stemmed, seeded and cut into one inch cubes
1 1/2 cups uncooked brown rice
3 cups chicken stock

Steps:

  • To make the pork chops: Combine sherry, pepper, 1 tbsp of the soy sauce and 1/2 tsp of the sugar in a medium bowl. Add pork and gently toss until well coated. Let marinade in the refrigerator.

Cook, undisturbed, until a golden brown crust forms on the bottom, about 1 1/2 minutes. Turn the cubes over and cook until a golden brown crust forms on the other side, about 1 1/2 minutes.Return onion and peppers to the pan and toss to combine.
