⅔ cup all-purpose flour
⅔ cup grated Parmesan cheese
1 ⅓ cups bread crumbs
1 teaspoon poultry seasoning
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper
1 ½ cups milk
12 ounces chicken tenderloins

  • Cook until the edges are browned, then flip and cook until browned on the other side. If some chicken is done sooner, keep on a paper towel lined plate in a warm oven, so that the chicken is all still warm at serving time.

Provided by NicoleMcmom

Time 5h

Yield 8

Number Of Ingredients 12

4 pounds bone-in chicken drumsticks and thighs, with skin
4 cups buttermilk
2 tablespoons hot pepper sauce (such as Crystal ®)
1 tablespoon kosher salt
3 teaspoons ground black pepper, divided
3 cups all-purpose flour
2 teaspoons kosher salt
1 ½ teaspoons onion powder
1 teaspoon garlic powder
1 teaspoon ground paprika
½ teaspoon cayenne pepper
1 quart vegetable oil for frying, or as needed

Steps:

  • Combine chicken, buttermilk, hot sauce, 1 tablespoon salt, and 2 teaspoons pepper in a large, non-reactive bowl. Stir until chicken is well coated. Cover and refrigerate at least 4 hours, or overnight.
  • Combine flour, 2 teaspoons salt, onion powder, garlic powder, paprika, remaining 1 teaspoon pepper, and cayenne in a large bowl; whisk until well combined.
  • Remove chicken from the refrigerator. Working with one piece at a time, remove from the marinade and allow excess to drip off. Coat evenly in the flour mixture, and set on a wire rack set inside a rimmed baking sheet.
  • Pour oil into a large Dutch oven to a depth of 1 inch. Heat over medium-high heat until it reaches 350 degrees F (175 degrees C).
  • Add a few chicken pieces to the hot oil and cook, turning once or twice, until golden brown on the outside, no longer pink at the bone, and the juices run clear, 10 to 15 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Maintain the oil temperature around 320 degrees F (160 degrees C) during cooking. Remove chicken to a clean wire rack set over a paper towel-lined baking sheet. Return oil to 350 degrees F (175 degrees C) and repeat to fry remaining chicken.
  • Serve immediately.

Tips:

  • Use a flavorful marinade: The marinade not only adds flavor to the chicken, but it also helps to tenderize it. Be sure to use a marinade that contains acidic ingredients, such as lemon juice, vinegar, or yogurt, as these help to break down the proteins in the chicken. Using buttermilk as a marinade is a Southern tradition, and it produces juicy, tender chicken.
  • Season the chicken well: Don't be afraid to season the chicken generously with salt and pepper. You can also add other spices, such as paprika, garlic powder, or onion powder.
  • Use a light coating of flour: Dredging the chicken in flour before frying it helps to create a crispy crust. However, be sure to use a light coating of flour, as too much flour will make the chicken tough.
  • Fry the chicken in hot oil: The oil should be at least 350 degrees Fahrenheit before you add the chicken. This will help to ensure that the chicken cooks evenly and doesn't absorb too much oil.
  • Don't overcrowd the pan: When frying the chicken, be sure to not overcrowd the pan. This will cause the oil temperature to drop, which will result in soggy chicken.
  • Cook the chicken until it is golden brown: The chicken is done cooking when it is golden brown and the juices run clear. Be sure to use a meat thermometer to check the internal temperature of the chicken to ensure that it has reached 165 degrees Fahrenheit.

Conclusion:

Southern fried chicken is a classic dish that is loved by people all over the world. It is a delicious and versatile dish that can be served with a variety of sides. Whether you are making it for a special occasion or just a weeknight dinner, following these tips will help you make the best Southern fried chicken you've ever tasted.
