½ cup shredded chicken
2 tablespoons celery, diced
1 tablespoon white onion, finely diced
6 cherry tomatoes, sliced in half
2 tablespoons apple, diced
3 tablespoons greek yogurt
salt, to taste
pepper, to taste
2 pieces whole wheat bread
1 leaf romaine lettuce

Steps:

  • In a bowl, combine chicken, celery, onion, sliced tomatoes, apple, yogurt, salt and pepper.
  • Spread the chicken salad on one of the pieces of bread and place the lettuce on the other piece. Top with desired condiments and bring the two pieces of bread together. Cut in half and place in a reusable container with some fruits and veggies.

1 10 oz can(s) white meat chicken
12 pecans, finely chopped
1 shallot, finely chopped
1/2 green apple, finely chopped
1 stick of celery, finely chopped

1 pound boneless, skinless chicken breast (2 small whole breasts)
3/4 cup plain nonfat yogurt
1 tablespoon Dijon mustard
2 tablespoons snipped fresh chives
1 tablespoon chopped fresh tarragon
1 Granny Smith apple
Juice of 1/2 lemon
1 cup finely diced fennel
1/2 cup finely diced celery
2 cups halved red seedless grapes
6 slices pumpernickel bread
1 bunch watercress, tough stems removed
Olive-oil, cooking spray

Steps:

  • Combine salt and pepper in a small bowl. Heat a large skillet over medium-high heat. Coat with cooking spray. Sprinkle chicken with half of the salt-pepper mixture; place in the skillet. Reduce heat to medium; cover. Cook until chicken is cooked through, about 12 minutes, flipping halfway through. Remove from the pan; set aside.

1/3 cup soy sauce
3 pounds boneless skinless chicken breasts
2 cups water
1/2 cup each chopped green pepper, red onion and celery
1-1/2 cups mayonnaise
1/2 teaspoon garlic salt

1/2 teaspoon Italian seasoning
1/2 teaspoon dried basil
