Time 3h30m

Yield 4 serving(s)

Number Of Ingredients 17

1 lb sirloin steaks or 1 lb beef tenderloin steak, sliced thin
assorted chopped vegetables (bell peppers, carrots, celery, bean sprouts, mushrooms, bamboo, broccoli, etc.)
tofu, cubed (optional)
3 tablespoons sherry wine or 3 tablespoons apple juice
1 1/2 tablespoons soy sauce
2 teaspoons oyster sauce
1 teaspoon cornstarch
1/2 teaspoon baking soda
1/4 teaspoon salt
1 clove garlic, crushed
1 inch fresh ginger, peeled and sliced or grated
1/2 cup water
2 teaspoons cornstarch
1 tablespoon oyster sauce
1 tablespoon ketchup
1 tablespoon soy sauce
1/2 teaspoon five-spice powder (optional)

Steps:

  • Combine beef and marinade in zipper-type plastic bag.
  • Marinate in refrigerator at least 3 hours.
  • Heat 2 T oil in wok.
  • Stir-fry/pan-fry the meat in 2 batches until cooked through.
  • Remove meat to a warm dish.
  • Add chopped vegetables and a bit of oil to wok.
  • Stir-fry until crisp-tender.
  • Return meat to wok.
  • Add tofu if desired.
  • Stir-fry until heated through.
  • Add sauce; cook to desired thickness.
  • Serve with steamed jasmine rice, if desired.

Tips:

  • Use high-quality ingredients: The fresher and better quality the ingredients, the tastier your stir-fry will be. Choose tender cuts of beef, crisp vegetables, and flavorful sauces.
  • Marinate the beef: Marinating the beef before cooking helps to tenderize it and add flavor. You can use a simple marinade of soy sauce, garlic, and ginger, or get creative with your own favorite flavors.
  • Cut the beef against the grain: This will help to make the beef more tender and easier to chew. Simply slice the beef across the muscle fibers, rather than with them.
  • Cook the beef in a hot pan: This will help to sear the outside of the beef and keep the juices inside. Be sure to use a pan that is large enough to accommodate all of the beef without overcrowding.
  • Don't overcook the beef: Beef stir-fry is best when the beef is cooked quickly and still slightly pink in the center. Overcooked beef will be tough and chewy.
  • Add the vegetables at the end: Vegetables cook quickly, so it's best to add them to the stir-fry towards the end of the cooking process. This will help to prevent them from becoming overcooked and mushy.
  • Use a flavorful sauce: The sauce is what really brings a stir-fry together. Be sure to use a sauce that is flavorful and complementary to the other ingredients. You can use a store-bought sauce or make your own.

Conclusion:

Beef stir-fry is a quick, easy, and delicious meal that can be enjoyed by people of all ages. By following these tips, you can make a beef stir-fry that is packed with flavor and sure to please everyone at the table. So next time you're looking for a quick and easy weeknight meal, give beef stir-fry a try.
