1 (1 pound) flat iron steak
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
1 tablespoon vegetable oil, divided
½ pound cremini mushrooms
½ cup Burgundy wine
1 cup beef stock
1 tablespoon butter, softened
1 tablespoon all-purpose flour
½ cup heavy whipping cream
2 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Sprinkle both sides of flat iron steak with salt, black pepper, garlic powder, and onion powder. Heat a heavy, oven-proof skillet over medium-high heat, pour 2 teaspoons vegetable oil into the hot skillet, and heat until oil shimmers. 2 flat iron steaks, 8 oz each
2 tablespoons olive oil
12 ounces cremini mushrooms, quartered
3 garlic cloves, minced
1/4 cup fresh chives, rough chop
3 tablespoons peppercorns, coarse grind
1 tablespoon Dijon mustard
1/2 cup beef broth
1/3 cup whipping cream
1 teaspoon salt
1/2 teaspoon ground cumin
1 teaspoon ground black pepper

Steps:

  • Combine the salt, ground cumin and 1 teaspoon ground black pepper.
  • Press into steaks and set aside for 30 minutes at room temperature.
  • Heat grill to medium, or if using coals until white.
  • Cook steaks 6 minutes on first side, 5 minutes on second side.
