2 pounds flank steak
1/2 cup extra virgin olive oil
3 garlic cloves (minced)
1 Tablespoon chopped rosemary
1 Tablespoon chopped thyme
1 Tablespoon chopped oregano
1 teaspoon salt
1/2 teaspoon pepper
2 avocados (diced)
3 roma tomatoes (diced)
1 (11 ounce) can yellow corn (drained)
½ red onion (diced)
¼ cup chopped cilantro
juice of one lime

Steps:

  • In a large bowl or ziplock bag, add olive oil, garlic, chopped rosemary, thyme, oregano, salt and pepper. Add flank steak and marinate for 1 hour or overnight.
  • Preheat grill to high heat. Discard marinade and add flank steak to the grill. Let the steak sear on high heat for 1-2 minutes on each side and then move to indirect heat and let cook until desired doneness. Medium rare is 130-135 degrees on a thermometer. Remove steak from heat and cover with aluminum foil and let rest for 10 minutes.
  • To make the avocado corn salsa: Add avocado, tomatoes, corn, red onion, cilantro and lime juice to a medium sized bowl and mix until combined.
  • Slice the steak across the grain and top with avocado corn salsa.

1 cup finely chopped white onion, rinsed

1 lime, juice and zest
1/4 cup rice vinegar (we use garlic rice vinegar)
1 tablespoon Accent seasoning
1 teaspoon soy sauce
2 teaspoons garlic powder
1/4 teaspoon pepper
1 lb flank steak, cut across the grain into 1/2 inch strips
1 avocado, peeled and cubed
1 tablespoon cilantro, chopped
2 garlic cloves, minced
salt

Steps:

  • In a bowl whisk together the first 7 ingredients (oil - pepper). Set aside 2 tablespoons of mixture and then add steak to the bowl. Toss. Set aside for 15 minutes.
  • In a small bowl mix together salsa ingredients (avocaado - garlic plus the reserved marinade mixture). Season with salt and set aside.
  • Heat grill to medium high and spray racks with Pam.

⅓ cup soy sauce
¼ cup olive oil
1 small lime, juiced
3 tablespoons white vinegar
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon ground black pepper

½ teaspoon dried oregano
½ teaspoon cayenne pepper
½ teaspoon ground cumin
½ teaspoon smoked paprika
1 ½ pounds beef flank steak, trimmed of excess fat
1 medium ripe mango, diced
1 avocado, chopped
1 medium lime, juiced
1 fresh jalapeno pepper, seeded and diced

1 (12 ounce) package tortillas
