Tomatoes, onions, and cucumbers (yes, cucumbers!) roast along with the steak, creating a crunchy, juicy salad that just begs to be topped with feta.

Provided by Molly Gilbert

Categories     Salad     Beef and Pork Salad Recipes     Beef Salad Recipes

Time 2h56m

Yield 6

Number Of Ingredients 15

2 pounds flank steak
6 tablespoons extra-virgin olive oil
¼ cup fresh lemon juice
2 tablespoons Worcestershire sauce
4 cloves garlic, minced
2 teaspoons ground oregano
1 teaspoon kosher salt
¼ teaspoon black pepper
1 (15 ounce) can chickpeas, drained and rinsed
1 ½ cups cherry tomatoes, halved
1 English cucumber, chopped
1 red onion, chopped
8 cups chopped romaine lettuce
1 cup crumbled feta cheese
¼ cup chopped fresh parsley

Steps:

  • Put steak in a large resealable plastic bag. Whisk olive oil, lemon juice, Worcestershire sauce, garlic, oregano, salt, and pepper in a small bowl. Reserve 1/2 cup marinade for vegetables; pour remainder over steak and turn to coat. Seal bag. Chill at least 2 hours or up to 12 hours.
  • Preheat oven to 450 degrees F (230 degrees C). Place 1 rack in center position and another 4 inches from broiler. Line a baking sheet with aluminum foil and spray with cooking spray.
  • Toss chickpeas, tomatoes, cucumber, and onion with reserved 1/2 cup marinade on the prepared baking sheet and spread in an even layer.
  • Roast on center rack until vegetables begin to pucker and brown, 15 to 20 minutes.
  • Remove baking sheet from oven and turn oven to broil. Push vegetables to the middle of the pan. Remove steak from marinade, allowing excess liquid to drip off, brush off garlic, and set on top of vegetables. Discard marinade.
  • Broil steak on top rack, flipping once, until it begins to char and an instant-read thermometer inserted into thickest part registers 125 degrees F for rare or 135 degrees F for medium-rare, 3 to 5 minutes per side.
  • Cover loosely with foil and let rest 10 minutes before slicing steak thinly across the grain. Serve warm steak and vegetables with pan juices over romaine, sprinkled with feta cheese and parsley.

Cuban Flank Steak with Avocado and Tomato Salad Recipe - (4.5/5) image

Provided by cndrela13

Number Of Ingredients 15

For the Mojo Sauce -
1/4 cup olive oil
1/4 cup fresh lime juice
2 Tbls orange juice
4 garlic cloves
2 Tbls water
1/2 tsp cumin
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried oregano
Hand full of fresh cilantro
1 flank steak
1 avocado, chopped
1 tomato, chopped
4 Tbls finely chopped red onion

Steps:

  • Place all of the Mojo Sauce ingredients in a small food processor, or blender. I have a "Bullet" which I love and is perfect for making the mojo sauce. Place the flank steak in a zip lock bag or shallow dish. Add the sauce; l let marinate in refrigerator for 2 hour to overnight. Remove the flank steak from the marinade; place remaining marinade in saucepan. Let steak stand at room temperature for 30 minutes. Grill the flank steak to your desired doneness. As you can see from the picture, we like ours on the rare side. Let the cooked steak stand for 10 minutes before thinly slicing across the grain. Bring the marinade in the saucepan to a boil. Let it cook for several minutes; it will begin to thicken. Place the avocado, tomato and onion into a bowl. Add the heated mojo sauce to the salad. Serve on the side of the steak, or on top. Your preference.

CLEAN EATING SOBA NOODLE SALAD WITH FLANK STEAK

Clean Eating Soba Noodle Salad With Flank Steak image

Entered for safe-keeping. From Clean Eating, May/June 2009. A Japanese-inspired salad. This can be served hot as a stir-fry or chilled as a main course.

Provided by KateL

Categories     Lunch/Snacks

Time 2h30m

Yield 4 serving(s)

Number Of Ingredients 13

4 ounces soba noodles (buckwheat noodles)
1 lb flank steak
2 teaspoons olive oil
1 cup napa cabbage, shredded
1 cup carrot, shredded
1 cup fresh bean sprout
1/4 cup fresh cilantro, chopped
3 tablespoons low sodium soy sauce
2 tablespoons rice wine vinegar
1 teaspoon fresh ginger, minced
1 tablespoon sucanat
2 teaspoons sesame oil
1/2 tablespoon sesame seeds

Steps:

  • Cook noodles according to the package directions.
  • Slice steak across the grain into strips (about 1/4-inch thick by 2 inches long).
  • Heat oil in a saute pan over medium-high heat and cook meat for 5 minutes or until no longer pink in the middle; drain and set aside.
  • Meanwhile, in a large bowl, toss together cooked noodles, cabbage, carrots, bean spouts and cilantro. Add flank steak strips.
  • PREPARE DRESSING:.
  • Prepare dressing in a small bowl; whisk together all dressing ingredients. Pour over steak and toss gently.
  • Let steak cool and, for best flavor, refrigerate for 2-3 hours before serving salad. (Will last in refrigerator for up to 4 days.).

Tips:

  • Choose the right flank steak: Look for a flank steak that is about 1 1/2 to 2 pounds and has a nice even thickness. Avoid flank steaks that are too thin or too thick, as they will not cook evenly.
  • Marinate the flank steak: Marinating the flank steak in a flavorful marinade will help to tenderize it and add flavor. You can use a variety of marinades, such as a simple olive oil and garlic marinade, a citrus-based marinade, or a soy sauce-based marinade.
  • Cook the flank steak over high heat: Flank steak is best cooked over high heat so that it can quickly sear and develop a nice crust. You can cook the flank steak in a grill pan, a skillet, or on an outdoor grill.
  • Let the flank steak rest before slicing: Once the flank steak is cooked, let it rest for a few minutes before slicing. This will allow the juices to redistribute throughout the steak, making it more tender and juicy.
  • Slice the flank steak against the grain: When you slice the flank steak, be sure to slice it against the grain. This will make the steak more tender and easier to chew.

Conclusion:

Flank steak salad is a delicious and healthy meal that is perfect for a quick and easy weeknight dinner. The flank steak is marinated in a flavorful marinade and then cooked over high heat until it is tender and juicy. The steak is then sliced and served over a bed of salad greens, tomatoes, cucumbers, and onions. The salad is dressed with a simple vinaigrette dressing. Flank steak salad is a great way to get your daily dose of protein and vegetables. It is also a low-carb meal that is perfect for those on a diet.
