BREAD DOUGH - PLACE IN BREAD PAN IN ORDER. USE DOUGH SETTING ON BREAD MACHINE.
1 1/4 c ( 300 ml) milk (1/2 c + 2 t)
1 c (250 gms) butter, room temperature (1/2 c)
2 eggs (1)
1 1/2 tsp salt (3/4 t.)
2 Tbsp white sugar (1 tbsp)
4 c unbleached white flour (2 c.)
1 Tbsp active dry yeast (1/2 tbsp)
LEEK FILLING
1 1/2 lb (750 grams) leeks (3/4 lb)
2 Tbsp (30 grams) butter (1 tbsp)
1 1/2 tsp dried thyme or sage (3/4 t.)
salt and pepper
2 egg yolks (1)
1/3 c heavy cream (or canned evaporated milk) (3 tbsp)
OR CHEESE FILLING - FLAMICHE AU FROMAGE
3/4 lb cheese, shredded (strong flavoured) (6 oz)
1 egg
1 egg yolk
1/3 c heavy cream (3 tbsp)
salt and pepper
WHILE DOUGH IS RISING PREPARE THE FILLING.

Steps:

  • 1. LEEK FILLING
  • 2. Trim leeks, discarding most of green tops, cut lengthwise and slice into ¼ inch slices. Wash thoroughly to remove any grit and drain in colander.
  • 3. Melt butter in a medium pan, add the leeks with the thyme or sage, salt and pepper, and press a piece of foil on top. (Do not use lid of pan instead of foil. The leeks will brown.)
  • 4. Cover with a lid and sweat the leeks over low heat until they are very tender, 20 to 30 minutes. Do not let them brown.
  • 5. Butter two 10 inch spring form pans. When dough is ready, punch down and divide the dough in half and roll or pat a 15-inch circle from each half. (The dough will be very soft and floppy). Line the pans with dough letting it drape over the rim of the pan. Spread the leeks over the dough. Whisk egg yolks and cream with salt and pepper until mixed. Spoon this custard over the leeks. Fold the overhanging dough on top of the filling to half cover it, pleating it toward the center. Leave to rise in a warm place until almost doubled (20 to 30 minutes).
  • 6. Set baking sheet on bottom rack in oven while heating to 400 degrees.
  • 7. Bake the Flamiches until the crust is browned and starts pulling away from the sides of the pan; the filling should be set. Allow 40-50 minutes baking time and, if in doubt, bake longer as the dough is slow to cook. If the top browns too quickly, cover loosely with foil. Let Flamiches cool 5 minutes before unmolding.
  • 8. Serve freshly baked and warm with a green salad alongside. Definitely best on the first day.
  • 9. Alternative to Leek filling - Cheese filling: Dice, slice or crumble cheese over bread dough after lining pans and before folding over edges. Top with the custard. Fold dough on top, let rise and bake as for Flamiche aux Poireaux.

Crust:
4 tablespoons (or more) ice water
3/4 teaspoon apple cider vinegar
1 1/2 cups unbleached all purpose flour
3/4 teaspoon salt
1/2 cup (1 stick) plus 1 tablespoon chilled unsalted butter
Filling:
1/2 cup whole milk
1/2 cup heavy whipping cream
1 large egg
1 large egg yolk
1/4 teaspoon salt
1/2 cup crumbled aged goat cheese (such as Bûcheron), rind trimmed
1 1/2 cups Leek Confit

Steps:

  • Crust:
  • Combine 4 tablespoons ice water and cider vinegar in small bowl. Blend flour and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. With machine running, slowly add water-vinegar mixture, processing until moist clumps form. If dough seems dry, add ice water by teaspoonfuls.
  • Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate at least 2 hours. DO AHEAD: Can be made 3 days ahead. Keep refrigerated. Allow dough to soften slightly at room temperature before rolling out.
  • Position rack in center of oven and preheat to 375°F. Roll dough out on lightly floured work surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Press dough onto bottom and up sides. Fold in overhang and press to extend dough 1/2 inch above sides of pan. Line pan with foil and dried beans or pie weights. Bake until dough looks dry and set, about 30 minutes. Remove foil and beans and continue to bake until crust is pale golden, 20 to 25 minutes longer. Remove from oven and cool while preparing filling.
  • Filling:
  • Whisk milk, cream, egg, egg yolk, and salt in medium bowl to blend. Sprinkle 1/4 cup cheese over bottom of warm crust; spread leek confit over and sprinkle with remaining cheese. Pour milk mixture over. Bake until filling has puffed, is golden in spots, and center looks set, 35 to 40 minutes. Transfer to rack; cool slightly. Remove pan sides. Serve warm or at room temperature.

FLAMICHE

Try this French dish that's halfway between a pizza and a quiche. Crème fraîche mixed with cheese and eggs makes a tasty topping along with delicious buttery leeks

Provided by Claire Thomson

Categories     Dinner, Lunch

Time 1h5m

Yield Serves 2-4 (4 as a light meal)

Number Of Ingredients 13

250g strong white bread flour, plus extra for dusting
5g salt
5g fast-action dried yeast
2 tbsp olive oil, for the bowl
20g butter
500g leeks, white and pale green part only, thinly sliced
2 eggs, beaten
150g crème fraîche or soured cream
80g comté, gruyère or cheddar (use cheddar for vegetarians), grated
1 large thyme or rosemary sprig, leaves picked
¼ whole nutmeg, grated
20g parmesan or vegetarian alternative, grated
salad, to serve (optional)

Steps:

  • Mix the flour and salt together in a large bowl. Mix the yeast with 175ml warm water and leave for 5 mins to froth just a little, then add to the flour and mix vigorously with a metal spoon. Knead the dough as soon as it comes together on a lightly floured surface for around 5 mins until smooth. Alternatively, use a mixer fitted with a dough hook, working the dough for around 5 mins on medium speed, then adding the salt towards the end of the mixing time. Leave in a lightly oiled bowl covered with a clean, damp tea towel until nearly doubled in size, about 1 hr.
  • Meanwhile, heat the butter in a frying pan over a medium heat and cook the leaks until softened, about 8 mins. Don't let them colour. When soft, remove from the heat and leave to cool. Beat the eggs, crème fraîche, grated cheese, herbs and nutmeg together, and season well with plenty of pepper and some salt. Mix in the leeks.
  • Heat the oven to 220C/200C fan/gas 7. Line a 40 x 30cm baking tray with baking parchment. Lightly flour the work surface and roll the dough out to fit the baking sheet - it should be about 5mm thick. Make a small lip around the edge of the dough by folding the dough inward. Evenly spread the leek mixture over the dough, leaving a 1cm border. Sprinkle over the parmesan.
  • Cook the flamiche in the oven for around 25 mins until lightly golden on the top and the base is crisp. Remove from the oven, cut into squares and serve with salad, if you like.

FLAMICHE AUX POIREAUX (LEEK TART)

Flamiche Aux Poireaux (Leek Tart) image

Provided by Patricia Wells

Categories     dinner, lunch, main course, side dish

Time 2h30m

Yield Eight servings

Number Of Ingredients 12

1 1/3 cups unbleached flour
8 tablespoons unsalted butter, cubed and chilled
1/2 teaspoon salt
4 to 5 tablespoons ice water
12 small leeks (about 3 pounds)
4 tablespoons unsalted butter
1 teaspoon salt
Freshly ground black pepper
2 large eggs
1/4 cup creme fraiche or heavy cream
4 slices unsmoked ham, such as prosciutto, coarsely chopped
3/4 cup grated Gruyere-style cheese, such as Comte

Steps:

  • In a food processor, process the flour, butter and salt until the mixture resembles coarse crumbs, about 10 seconds. Add three tablespoons of water and process for three seconds. Pinch the dough, and if it does not hold together, add additional water and process for several more seconds. Be careful not to overmix. The dough should not form a ball. Turn the dough out onto a lightly floured work surface and knead, just until it forms a ball. Wrap the pastry in plastic wrap and flatten into a disk. Refrigerate for about 30 minutes.
  • Roll out the dough to line a 10 1/2-inch tart pan. Carefully transfer the dough to the pan. Chill for another 30 minutes, or until firm.
  • Preheat the oven to 425 degrees.
  • Trim the leeks at the root. Cut off and discard the fibrous, dark green portion. Split the leeks lengthwise for easier cleaning and rinse in cold water until no grit appears. Coarsely chop the leeks.
  • Melt the butter in a medium saucepan over low heat, add the leeks, salt and pepper and cook, covered, until the leeks are very soft, about 20 minutes. They should not brown.
  • If the leeks have given up an excessive amount of liquid, drain them in a colander. Combine the eggs and creme fraiche in a medium-size bowl, mixing until thoroughly blended. Add the leeks and mix again. Reserve a quarter cup each of the cheese and the ham to sprinkle on top of the tart. Mix the rest into the leek mixture.
  • Pour the leek mixture into the prepared tart tin. Sprinkle with the ham, then the cheese. Season generously with freshly ground black pepper.
  • Bake until nicely browned, 40 to 45 minutes. Serve warm or at room temperature.

BELGIAN LEEK TART & AGED GOAT CHEESE (FLAMICHE AUX POIREAUX)

Belgian Leek Tart & Aged Goat Cheese (Flamiche Aux Poireaux) image

Cooking Life columnist Molly Wizenberg makes a particularly addictive version of this traditional Belgian dish with the addition of aged goat cheese. Bon Appetit Magazine, October 2008 edition. Leeks look like oversize scallions, and they are related to both onions and garlic, but their taste is softer and more subtle than any of them. In a word, they're delicious. I love leeks but have to admit that I don't cook them as often as I should. Haven't included cooling times.

Tips:

  • Use good quality leeks: Fresh, young leeks with firm white and light green stalks are best for this recipe.
  • Wash the leeks thoroughly: Leeks can be quite dirty, so make sure to rinse them well under running water to remove any grit or dirt.
  • Slice the leeks thinly: This will help them cook evenly and quickly.
  • Use a heavy-bottomed pan: This will help to distribute the heat evenly and prevent the leeks from burning.
  • Cook the leeks slowly: Over high heat, the leeks will brown too quickly and won't have time to soften.
  • Season the leeks well: Salt, pepper, and nutmeg are all classic seasonings for leeks.
  • Use a good quality bread dough: This is the foundation of the flamiche, so make sure it's fresh and flavorful.
  • Don't overwork the dough: Overworking the dough will make it tough.
  • Let the dough rise before baking: This will help it to develop flavor and texture.
  • Bake the flamiche until the crust is golden brown and the leeks are tender: This will usually take about 30 minutes.

Conclusion:

Flamiche aux poireaux is a delicious and versatile dish that can be served as an appetizer, main course, or side dish. It's perfect for a light lunch or dinner, and it's also a great way to use up leftover leeks. With its creamy, cheesy filling and flaky crust, this flamiche is sure to be a hit with everyone who tries it.
