CALF'S LIVER WITH BACON AND ONIONS

Calf's Liver with Bacon and Onions image

The mashed sweet potatoes with sage butter are a great side dish for calf's liver. We recommend asking the butcher for the freshest calf's liver available, since it can vary in quality. Soaking the liver in milk, a method typically used for pork liver, helps soften and mellow its flavor.

1 lb calf's liver (1/2 inch thick), cut into 4 pieces
1 cup whole milk

1 teaspoon salt
1/2 teaspoon black pepper

Time 40m

Number Of Ingredients 8

2 thin slices of calf's liver
1 large onion, sliced into rings
shake some pepper to taste
shake some garlic powder to taste
1/2 cup or more soy sauce to cover liver
2 tablespoons butter, divided
2 tablespoons olive oil, divided
3 tablespoons milk

Steps:

  • 1. COOK'S TIP Marinate the calf's liver in a shallow dish covered with soy sauce. You can cook the onions in one skillet and the liver in a second skillet.
  • 2. ONIONS: Caramelize the onion rings while the liver marinates. Heat a medium skillet over medium high heat, add one tablespoon of olive oil and one tablespoon of butter. Add the onion rings and a little pepper to taste. Salt lightly, if you prefer. Cook onions until limp. Add the 3 tablespoons of milk, one at a time, to the pan with the onions and stir gently and cook until golden brown. As they brown, you will have to watch them carefully so they don't burn. When they are a nice caramel color, set aside and keep warm.
  • 3. LIVER Pre-heat a large skillet with 1 tablespoon olive oil and one tablespoon butter. Remove liver from the shallow dish, shake off soy sauce. Shake garlic powder generously over liver, follow with fresh cracked pepper. Place the seasoned side of the liver in the hot oil. Fry until it is brown, then turn and fry the other side until it is brown. Make sure it is brown, but don't overcook the liver. About 5 minutes per side.
  • 4. Serve with the caramelized onions on top of the liver. Enjoy!

Liver had not been one of my favorites..however, after making this recipe, I changed my mind. The brandy and raisins give this dish that special taste. Also is an excellent source of iron.

Tips:

  • Choose the right liver: Select a fresh, plump calf's liver with a smooth, shiny surface. Avoid any liver with discoloration or bruising.
  • Soak the liver: Soaking the liver in milk for 30 minutes to an hour helps remove any bitterness and impurities.
  • Slice the liver thinly: Thinly sliced liver cooks quickly and evenly. Aim for slices that are about 1/2 inch thick.
  • Season the liver well: Season the liver liberally with salt and pepper before cooking. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Cook the liver quickly: Overcooking the liver will make it tough and dry. Cook the liver for just a few minutes per side, or until it is cooked through but still slightly pink in the center.
  • Caramelize the onions slowly: Caramelizing the onions slowly over low heat brings out their natural sweetness and flavor. Be patient and don't rush this step.
  • Serve the liver with a flavorful sauce: A simple pan sauce made with butter, wine, and herbs is a classic accompaniment to calf's liver. You can also serve the liver with a creamy sauce or a tangy vinaigrette.

Conclusion:

Flamboyant calf's liver with caramelized onions is a delicious and elegant dish that is sure to impress your guests. The liver is tender and flavorful, while the caramelized onions add a touch of sweetness and complexity. This dish is perfect for a special occasion or a romantic dinner. Serve it with a glass of red wine and enjoy!
