3 cans (15-1/2 ounces each) great northern beans, rinsed and drained
3 cups cubed cooked chicken breast
1 jar (15 ounces) Alfredo sauce
2 cups chicken broth
1-1/2 cups frozen gold and white corn (about 8 ounces), thawed
1 cup shredded Monterey Jack cheese
1 cup shredded pepper jack cheese
1 cup sour cream
1 small sweet yellow pepper, chopped
1 small onion, chopped
1 to 2 cans (4 ounces each) chopped green chiles
3 garlic cloves, minced
3 teaspoons ground cumin
1-1/2 teaspoons white pepper
1 to 1-1/2 teaspoons cayenne pepper
Optional: Salsa verde and chopped fresh cilantro

Steps:

  • In a 5- or 6-qt. slow cooker, combine all ingredients except salsa and cilantro. Cook, covered, on low until vegetables are tender and flavors are blended, 3-4 hours, stirring once. If desired, serve with salsa and cilantro.

It seems to come out as more of a soup than a chili, and I highly recommend putting in at least one jalapeno because it adds to the flavor.

3 (15 ounce) cans great northern beans, drained
8 ounces chicken breasts, cooked and shredded
1 cup onion, chopped
1 1/2 cups bell peppers, chopped
2 jalapeno peppers, stemmed seeded, and chopped (optional)
2 garlic cloves, minced
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon dried oregano
3 1/2 cups chicken broth
sour cream
shredded cheddar cheese
tortilla chips

Steps:

  • Combine all ingredients except sour cream, cheddar cheese, and chips in slow cooker.
  • Cover. Cook on Low 8-10 hours, or High 4-5 hours.
  • Ladle into bowls and top individual servings with sour cream, cheddar cheese, and chips.

12 ounces boneless skinless chicken breasts or 12 ounces chicken thighs, cut into 1/2-inch pieces
1 tablespoon cooking oil
3 (15 ounce) cans great northern beans (45 ounces total) or 3 (15 ounce) cans navy beans, rinsed and drained (45 ounces total)
2 1/2 cups chicken broth
2 (4 ounce) cans diced green chili peppers, undrained (8 ounces total)
1 medium onion, chopped (1/2 cup)
1 1/4 teaspoons cumin seeds
1/4-1 teaspoon cayenne pepper, to taste
1/4 teaspoon salt
3 garlic cloves, minced
sour cream, for topping (optional)
avocado, slices for topping (optional)

Steps:

  • In a large skillet cook chicken in hot oil over medium heat until brown. Drain off fat. Set chicken aside.
  • Place drained beans in a 3-1/2 to 4-quart crockpot; mash slightly with a potato masher. Add chicken to cooker. Stir in broth, undrained chile peppers, onion, cumin seeds, cayenne pepper, salt and garlic.
