EASY BEEF KABOBS
Steps:
- Cut steak, peppers, and onion into roughly equal sized pieces (about 1-1.5").
- In a large freezer bag or storage container, stir together the oil, Worcestershire sauce, soy sauce, vinegar, garlic, honey, onion powder, and chipotle powder if using.
- Add steak and let marinate for at least one hour, and up to 6 hours.
- If using wooden skewers, soak for 10 minutes before skewering beef and vegetables.
- Skewer beef cubes and vegetables, alternating as you like. I try to ensure 3-5 cubes of beef per skewer, depending on how long the skewers are.
- Preheat the grill to medium-high.
- Place kabobs directly over the heat, cooking for 4-5 minutes before flipping and cooking another 4-5 minutes. See notes for cook times depending on your preference for doneness.
- Remove and let sit 5 minutes before serving.

Place on the grill and cook, with lid lowered, 2 to 3 minutes per side, 8 to 12 minutes in all (8 minutes for rare and 12 for medium). Remove from the heat to aluminum foil, wrap and allow to rest for 2 to 3 minutes prior to serving.
MIDDLE EASTERN BEEF KABOBS
These are great either right off the grill or at room temperature - which makes them the perfect dish to pack up and take to the park on a hot summer night. The preserved lemon is a surprisingly good compliment to the beef tenderloin. Try them with a side of Cucumber-Yogurt Sauce.

Steps:
- Once your meat and veggies have been prepped let the skewering fun begin! Thread a piece of green pepper onto the skewer. Follow it with a cube of beef, then one half of a preserved lemon, a couple of pieces of red onion, another piece of beef, a piece of red pepper and cap it with a mushroom. Repeat the process with the rest of the skewers. Set all of the kabobs into a roasting pan in one layer and set aside.
- Place the remaining ingredients in a medium sized bowl and whisk until well incorporated. Pour the mixture over the kabobs and refrigerate 1 hour.
- Preheat an outdoor charcoal or gas grill to high heat. Place the kabobs on the grill and cook 3 minutes per side. Remove and serve immediately or let cool, pack 'em up and take them on a picnic.
- Serve with Cucumber-Yogurt Sauce.
- Combine all ingredients in a food processor and pulse several times to make a chunky sauce.

Steps:
- Thinly slice steak across grain. If necessary, flatten slices with palm of hand or meat mallet to 1/4-inch thickness. In a medium bowl combine beef, soy sauce, and five-spice powder; toss to coat beef. Thread beef on skewers (soak wooden skewers in water for 30 minutes before threading).
- For charcoal or gas grill, grill kabobs on rach of covered grill directly over medium heat for 4 to 6 minutes or to desired doneness, turning once.
- Meanwhile, in small bowl combine yogurt and snipped mint. From one lime, finely shred 1 teaspoon peel. Juice the lime. Stir peel and 1 tablespoon juice in to yogurt. Cut remaining lime in wedges, if desired. Serve kabobs with yogurt sauce, mint, and lime.
- Serve skewers with yogurt sauce and lime wedges. Top with additional fresh mint.

Tips:
- Choose the right cut of beef: Flank steak, skirt steak, or sirloin steak are all good choices for kabobs. These cuts are relatively tender and flavorful, and they cook quickly on the grill.
- Marinate the beef: Marinating the beef in a flavorful marinade will help to tenderize it and add flavor. You can use a variety of marinades, such as soy sauce, garlic, ginger, and brown sugar. Marinate the beef for at least 30 minutes, or up to overnight.
- Skewer the beef: Use metal skewers to skewer the beef. Soak the skewers in water for 30 minutes before using to prevent them from burning on the grill.
- Grill the kabobs: Preheat your grill to medium-high heat. Grill the kabobs for 8-10 minutes per side, or until cooked to your desired doneness. Baste the kabobs with marinade or sauce while grilling.
- Serve the kabobs: Serve the kabobs immediately with your favorite sides, such as rice, noodles, or vegetables.
