Time 50m

Yield 4

Number Of Ingredients 5

1 1/2 cups uncooked brown rice
3 cups Progresso™ chicken broth (from 32-oz carton)
4 eggs, beaten
1 lb ground sausage
1 bag (12 oz) frozen sweet peas

Steps:

  • In large covered pot, heat rice and chicken broth to boiling over high heat. Reduce heat to low; cover, and cook 35 to 40 minutes or until rice has absorbed all of the broth.
  • Heat large wok or skillet over medium-high heat. If not nonstick, add 2 teaspoons vegetable or canola oil. Cook eggs in wok until set but still a bit runny. Transfer to bowl; season with salt and pepper to taste, and set aside. In same wok, cook sausage, breaking up with wooden spoon. If wok is dry (this shouldn't be the case if you're using full-fat sausage), add 1 tablespoon oil, and then fold in hot rice, eggs and frozen peas. Spread evenly around wok, and cook 3 to 5 minutes. Continue to cook a few more minutes, folding, so peas cook through and everything blends together. Taste and adjust season-ings as desired.

Tips:

  • Use day-old rice: This will help the rice grains stay separate and prevent them from becoming mushy.
  • Choose the right kind of rice: Long-grain rice, such as basmati or jasmine, is best for fried rice.
  • Cook the rice properly: Make sure the rice is cooked through but not overcooked. It should be slightly firm to the bite.
  • Use a well-seasoned wok or large skillet: This will help prevent the rice from sticking.
  • Heat the wok or skillet over high heat: This will help create a nice sear on the rice.
  • Add the ingredients in order: Start with the aromatics (such as garlic, ginger, and onion), then add the vegetables, followed by the rice and eggs. Finally, stir in the sauce.
  • Stir-fry the rice constantly: This will help prevent it from burning and ensure that it is evenly cooked.
  • Season the rice to taste: Add salt, pepper, and other seasonings as desired.
  • Serve the fried rice immediately: It is best enjoyed fresh out of the wok or skillet.

Conclusion:

Fried rice is a delicious and versatile dish that can be made with a variety of ingredients. It is a great way to use up leftover rice and vegetables, and it can be easily customized to suit your own taste. With a little practice, you can make perfect fried rice at home.
