Time 25m

Number Of Ingredients 6

1 pound cod fillet (cut into 1 inch strips)
1 1/2 cups cheddar Goldfish® crackers
1 1/2 cups all purpose flour
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
1 cup low-fat milk

Steps:

  • Preheat the oven to 425 degrees.
  • Pour the Goldfish® crackers in a zip top bag and crush with a mallet or rolling pin until a fine crumb forms. Place the crushed crackers in a pie plate or shallow bowl.
  • Place the flour in a pie plate or shallow bowl. Whisk in the salt and pepper, set aside. Place the milk in another shallow bowl and set aside.
  • Dredge the fish in the flour, then the milk and coat with the cracker crumbs. Place the coated fish on a baking sheet coated with cooking spray (I like to line my baking sheet with foil for easy clean up.) Repeat with the remaining fish. Transfer the fish to the oven and bake for 10-12 minutes or until cooked through.
  • Serve immediately.

GARLIC WHITE BEAN MASH IN A FLASH

Garlic White Bean Mash In A Flash image

Sometimes you've just gotta have mash but you simply don't have the energy (or time) to peel, cut, boil and mash potatoes. On such occasions, this Garlic White Bean Mash In A Flash is simply fabulous to satisfy your craving - suitably named because it requires such little effort to make. I made this as a side for my Healthy Parmesan Garlic Crumbed Fish to make a complete meal in 15 minutes. This recipe is also great to use as a topping for bruschetta.

Tips:

  • Fresh is best: For the best flavor and texture, use fresh fish fillets or steaks. If using frozen fish, thaw it completely before cooking.
  • Season simply: Fish is a delicate protein, so don't overpower it with too many spices. A simple seasoning of salt, pepper, and lemon juice will do the trick.
  • Cook quickly: Fish cooks quickly, so don't overcook it. The best way to tell if fish is done is to insert a fork into the thickest part of the fillet. If it flakes easily, it's done.
  • Serve immediately: Fish is best served immediately after cooking. It will continue to cook if you let it sit, so don't wait to eat it!

Conclusion:

These recipes are a great way to enjoy a delicious and healthy fish meal in a flash. With just a few simple ingredients and a little bit of time, you can have a satisfying and nutritious meal on the table that the whole family will love. So next time you're short on time, don't be afraid to give one of these recipes a try. You won't be disappointed!
