GRILLED TILAPIA WITH MANGO SALSA

Grilled Tilapia with Mango Salsa image

Don't let the list of ingredients fool you: this is super-easy, and gets rave reviews whenever I serve it. The salsa can be made the day ahead to save time. Strawberries can be substituted for the mango if you prefer--both are excellent! Combine leftover salsa with some drained black beans the next day for lunch.

Number Of Ingredients 16

⅓ cup extra-virgin olive oil

½ teaspoon salt
2 (6 ounce) tilapia fillets
1 large ripe mango, peeled, pitted and diced
½ red bell pepper, diced
2 tablespoons minced red onion
1 tablespoon chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • Whisk together the extra-virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper, and 1/2 teaspoon salt in a bowl and pour into a resealable plastic bag. Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.

Time 40m

Yield 2 servings

Number Of Ingredients 12

2 serpent head fish fillets (can be substituted with snapper or catfish)
3 tablespoons fish sauce
Ground nut oil, for frying
Thai chili peppers, stem removed
2 tablespoons fish sauce
1 teaspoon sugar
2 limes, juiced
1 green mango, peeled and shredded
2 shallots, finely sliced

  • Put the shredded mango, shallots, lemongrass, coriander and spring onions into the salad bowl and toss.
  • Serve the mango salad with the crispy fish.

MANGO-LICIOUS TILAPIA

Mango-licious Tilapia image

My son's girlfriend, Nicole, named this 'mango-licous'. The mango salsa is great over the tilapia, as a dip or on cottage cheese. Try serving the tilapia over brown basmati rice or lightly dressed salad greens for a complete meal. Then generously top with the salsa. Mango-licious!!

1 small ripe mango , finely diced
1 tsp ground cumin

Tips:

  • Choose the right fish: For this recipe, firm-fleshed fish such as swordfish, tuna, or salmon work best. Avoid delicate fish like tilapia or cod, as they may break apart during cooking.
  • Make sure the fish is fresh: The fresher the fish, the better the flavor of the dish will be. Look for fish that has a bright, shiny appearance and a mild, briny smell.
  • Cook the fish properly: Overcooked fish is tough and dry, so it's important to cook it carefully. The best way to ensure that the fish is cooked through but still moist is to use a meat thermometer. Insert the thermometer into the thickest part of the fish and cook until it reaches an internal temperature of 145°F (63°C).
  • Make the mango relish ahead of time: The mango relish can be made up to 3 days in advance, which makes it a great option for busy weeknights. Simply store the relish in an airtight container in the refrigerator until you're ready to use it.
  • Serve the fish with your favorite sides: This fish dish pairs well with a variety of sides, such as roasted vegetables, mashed potatoes, or rice. You can also serve it with a simple green salad.

Conclusion:

This fish with mango relish is a delicious and easy-to-make dish that is perfect for any occasion. The combination of sweet and savory flavors makes it a crowd-pleaser, and the mango relish adds a refreshing touch. Whether you're looking for a quick weeknight meal or a special dish for a dinner party, this recipe is sure to impress.
