BAKED COD WITH BUTTERY CRACKER TOPPING

Baked Cod With Buttery Cracker Topping image

Baked, stuffed fish is an old-school restaurant staple in New England; covered in lemony, butter-soaked cracker crumbs, it's a wonderful way to eat mild white fish like cod or haddock. The dish has a long history and relies on two ingredients New Englanders have in abundance: fresh seafood and crackers, which are descended from sailors' hardtack. Fannie Farmer's 1896 "Boston Cooking-School Cook Book" has a recipe for cracker-stuffed halibut, seasoned with butter, salt, pepper and onion juice. Some modern versions use saltines, others use butter crackers like Ritz, and many enrich the crackers with crab meat. This recipe is an easy weeknight variation: Instead of rolling the fish up around the stuffing, which requires long, thin filets, it is generously covered in the stuffing and roasted until the cracker topping is toasted and the fish flakes.

Time 25m

Yield 4 servings

Number Of Ingredients 10

4 ounces butter-flavored crackers, such as Ritz (about 1½ sleeves; 1½ cups crushed)
5 tablespoons unsalted butter, melted
1/4 cup minced fresh chives
1/4 cup minced flat-leaf parsley
1/2 lemon, zest and juice, plus more lemon wedges for serving
1 teaspoon onion powder
1 teaspoon garlic powder
4 (6- to 8-ounce) fillets of cod, haddock, halibut or other white fish
Coarse kosher salt and black pepper
Sweet paprika, for serving

Steps:

  • Heat the oven to 425 degrees. Put the crackers in a medium bowl and use your hand to crush them until they are finely crushed. (Some coarser bits are OK.) Add 4 tablespoons of the melted butter, the chives, parsley, lemon zest and onion and garlic powders, and stir to evenly combine, making sure to moisten all the crumbs.
  • Put the fish fillets in a large, ovenproof skillet. Drizzle the remaining 1 tablespoon butter over the fish and turn to coat. Season the fish on all sides with salt and pepper. Mound the cracker mixture on top of the fish, covering it. (Some cracker crumbs will fall off the fish.)
  • Roast in the oven for 10 to 16 minutes, depending on the thickness of the fillets. Plan for about 10 minutes per inch; the fish should flake easily, and the juices should be bubbly around the edges. Squeeze the lemon juice over the top. Sprinkle with paprika, and serve with extra lemon wedges on the side.

CRAB STUFFED FISH

Crab Stuffed Fish image

I love this dish I got it off of the T.V years ago and I make it often. I normally use a whitefish of some sort. Tilapia or Flounder are my favorites. I usually serve with rice and steamed vegetable. It's filled with flavor and is pretty easy to make. I could eat the stuffing all by it's self. A lot of times I double the stuffing but it's up to you what you think.

Provided by Gail2293

Categories     Crab

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 10

6 tablespoons butter, divided
1 celery rib, finely chopped
1 small onion, finely chopped
1/4 cup chopped parsley
1 (4 1/2 ounce) can crabmeat, drained & flaked
1/2 cup dry Italian breadcrumbs
1 tablespoon lemon juice
1/8 tablespoon crushed red pepper flakes
6 fish fillets (about 2 pounds total)
paprika, to taste

Steps:

  • Preheat the oven to 400°F; coat a 9x13-inch baking dish w/ non stick cooking spray.
  • In a large skillet melt 4 T butter over medium-high heat. Add celery, onion & parsley. Sauté until tender. Remove from heat and stir in crabmeat, bread crumbs, lemon juice and red pepper flakes.
  • Spoon crabmeat mixture evenly over the filets. Starting from the small end, roll up each fillet, jelly roll- style. Place the rolls seam side down in baking dish. Melt the remaining butter and drizzle over fillets. Sprinkle with paprika.
  • Bake for 20 -25 minutes, or until fish flakes easily with a fork.

Tips:

  • Choose the Right Fish Fillets: Opt for firm-fleshed fish fillets such as tilapia, cod, or halibut. These hold up well during cooking and can withstand the stuffing.
  • Prepare the Stuffing Wisely: Ensure the stuffing is not too wet or dry. A slightly moist stuffing helps bind the ingredients together and prevents the fillets from becoming dry.
  • Season Generously: Don't shy away from using herbs, spices, and seasonings in both the stuffing and the fish fillets. This adds depth of flavor to the dish.
  • Proper Cooking Technique: Cook the fish fillets at a moderate temperature to prevent them from overcooking and drying out. Use a meat thermometer to ensure they reach an internal temperature of 145°F (63°C).
  • Serve with Complements: Enhance the flavors by serving the fish fillets with complementary sides such as roasted vegetables, mashed potatoes, or a tangy sauce.

Conclusion:

Fish fillets with stuffing offer a delectable and versatile main course option. By selecting the right fish, preparing a flavorful stuffing, and cooking the fillets with care, you can create a satisfying and nutritious meal. Experiment with different stuffing ingredients and cooking methods to tailor the dish to your preferences. Whether you're hosting a special occasion or enjoying a casual weeknight dinner, fish fillets with stuffing are sure to impress and delight.
