EASY SOUR CREAM BAKED SALMON
This easy baked salmon recipe is perfect for a weekday, but could also fill in for a special occasion. The fish is smothered with a mixture of sour cream, mustard, and parmesan cheese. When baking the fish, be careful not to overcook. (There are lots of tricks above in the article for how not to overcook salmon). For moist salmon, bake until the salmon is barely done at the thickest part then remove from the oven cover with foil and let rest.

Steps:
- Heat oven to 425 degrees F. Lightly oil a rimmed baking sheet or baking dish. (Instead of oiling the pan, you could also line with parchment paper).
- In a small bowl, combine sour cream, mustard, and the cheese. Season with salt and pepper to taste.
- Place salmon onto a baking sheet then spread two tablespoons of sour cream mixture on top of each salmon filet.
- Bake 10 to 15 minutes until barely done in the center at the thickest part of the salmon. The center should be firm, but with a small amount of uncooked salmon in the very center. Depending on how thick the salmon is, it may need a few minutes longer. (The internal temperature should be around 125 degrees F).
- Remove from oven then cover lightly with aluminum foil and let rest 5 to 10 minutes. During this time, the salmon will continue to cook.

FISH AND SOUR CREAM BAKE
Although the original recipe calls for Halibut, I've found that any firm, white fish will work. If your fish is frozen, soak it in milk to help remove the frozen "fishy" taste. This is an easy recipe that comes together fast. Except for the fish, most people will have all the other ingredients on hand. I love this after a hard work day....quick, easy, and delicious! Original recipe is from the "Reflections of the West" cookbook, but I've made a few changes.

FISH BAKED WITH SOUR CREAM
Although I haven't made this dish in ages, it was one of the first I tried when DH and I were dating, and I made dinner for him! For that reason, I'm glad I found this cookbook (Betty Crocker's New International) to share this sentimental (for us) dish. I remember it being a very tasty dish; it's not very colorful, but it does have a nice flavor, and when made with light sour cream, isn't too detrimental to the waistline! It's described as both Hungarian and Austrian in its origin, "betyar fogas", and the note says that it's often accompanied by boiled russet potatoes. I used to serve it with a colorful salad, since a white fish dish and white potatoes was way too bland!

Tips:
- When choosing fish, opt for firm-fleshed varieties like cod, salmon, or halibut, which can withstand the baking process without becoming dry.
- To ensure the fish cooks evenly, use a shallow baking dish that allows heat to circulate around the fish.
- Don't overcrowd the baking dish; leave some space between the fish pieces so that they can cook properly.
- To prevent the fish from sticking to the dish, grease the bottom of the pan with cooking spray or line it with parchment paper.
- Season the fish generously with salt and pepper before baking. You can also add other herbs and spices, such as dill, lemon zest, or paprika, to enhance the flavor.
- For a crispy crust, brush the fish with melted butter or olive oil before baking.
- Bake the fish at a high temperature (400-450°F) for a short period of time (10-15 minutes per inch of thickness). This will help to keep the fish moist and flaky.
- To check if the fish is cooked, insert a fork or knife into the thickest part of the fish. If the fish flakes easily and is opaque throughout, it is done.
Conclusion:
Baking fish with sour cream is a simple and delicious way to prepare this healthy and versatile ingredient. By following a few simple tips, you can create a flavorful and satisfying dish that is perfect for any occasion. Whether you are looking for a quick and easy weeknight meal or an elegant dish to serve at a special gathering, fish baked with sour cream is sure to please.
