FISH AND FENNEL STEW

Fish and Fennel Stew image

Provided by Sunny Anderson

Time 1h26m

Yield 4 to 6 servings

Number Of Ingredients 13

3 tablespoons olive oil
1 cup chopped onion
1 fennel bulb, stalks trimmed, core removed and thinly sliced
1 bay leaf
Kosher salt and freshly ground black pepper
1 lemon, thinly sliced
2 cloves garlic, grated on a rasp or minced
2 tablespoons tomato paste
4 Roma tomatoes, sliced 1/4-inch thick
2 cups dry white wine with citrus floral notes
2 cups fish stock
1 1/2 pounds skinless, boneless cod or pollock filets, cut into 8 chunks
Curly parsley, chopped for garnish

Steps:

  • In a stock pot over medium heat, add the olive oil, onions, fennel, bay leaf and season with a pinch of salt and a grind or two of pepper. Cook, stirring, until both the fennel and the onions are very tender, but not browned, 6 to 8 minutes. Cook's Note: Be careful to not break up the bay leaf during this process.
  • Add the lemon slices, garlic, and tomato paste stirring to combine. Cook until the tomato paste turns a deep reddish brown, then add the tomato slices and season with another pinch of salt. Allow to sit and bubble a bit, then stir, repeating until the tomatoes are completely broken down and some moisture has evaporated from the pot, about 10 minutes.
  • Add the wine and scrape up any bits on the bottom of the pan and bring to a simmer. Simmer uncovered until most of the wine has evaporated, about 10 minutes. Add the fish stock, raise to a simmer and nuzzle the fish into the pot, and simmer until fish is cooked through, 6 to 8 minutes. Serve warm with a sprinkle of chopped parsley.

  • Discard any mussels or clams that don't open. Spoon stew into soup bowls; top with croutons.

CIOPPINO (SEAFOOD SOUP) WITH FENNEL AND GARLIC

Cioppino (Seafood Soup) With Fennel and Garlic image

This is a tomato based broth with oodles of seafood, fennel and of course garlic in it since it is served at the stinking rose restaurant in LA Use ingredients as a guide, because fresh and local seafood will be best. It is actually a very simple recipe just with lots of choices to put in it :) The first part can be done early too, and then just reheated when you want to pop in the seafood. Prrp time includes chopping onions, etc.

FISH SOUP WITH AïOLI CROUTONS

Fish Soup with Aïoli Croutons image

Categories     Soup/Stew     Fish     Garlic     Tomato     Mayonnaise     Fennel     Leek     Carrot     White Wine     Winter     Bon Appétit

Yield Makes 6 to 8 servings

Number Of Ingredients 20

3/4 cup mayonnaise
2 teaspoons Dijon mustard
2 teaspoons red wine vinegar
2 garlic cloves, minced
3/4 teaspoon hot pepper sauce
6 tablespoons olive oil
4 leeks (white and pale green parts only), sliced
2 carrots, cut into 1/2-inch pieces
1 fennel bulb, cut into 1/2-inch pieces
2 shallots, chopped
6 large garlic cloves, chopped
2 plum tomatoes, coarsely chopped
2 tablespoons tomato paste
1/2 teaspoon dried thyme
1/4 teaspoon saffron threads
1 1/2 cups dry white wine
5 cups (or more) chicken stock or canned low-salt chicken broth
3 pounds assorted fish fillets (such as sea bass, snapper, and orange roughy), cut into 2-inch pieces
1 French bread baguette, cut into 1/3-inch-thick slices, toasted
Chopped fresh parsley

Steps:

  • Whisk first 5 ingredients and 3 tablespoons oil in small bowl to blend. Season to taste with salt and pepper. (Aioli can be made 1 day ahead. Cover and refrigerate.)
  • Heat remaining 3 tablespoons oil in heavy large pot over medium heat. Add leeks, carrots, fennel, and shallots; sauté until golden brown, about 15 minutes. Add garlic and sauté 2 minutes. Mix in tomatoes, tomato paste, thyme, and saffron. Add wine and boil 5 minutes. Add 5 cups stock and bring to boil. Reduce heat and simmer 15 minutes to blend flavors. Add fish and simmer until fish is cooked through, about 5 minutes. Cool slightly.
  • Working in batches, puree soup in blender. Working in batches, strain soup through coarse sieve set over large bowl, pressing firmly to force as much of solids as possible through sieve. Return soup to pot. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill.)
  • Spread enough aioli over each toast to cover. Bring soup to simmer, thinning with more stock, if desired. Ladle soup into bowls. Top each with 2 toasts. Sprinkle with parsley and serve.

Tips:

  • Ensure your fish is fresh. This will greatly impact the flavor and quality of your stew. Look for fish that is firm to the touch, has clear eyes, and smells like the ocean (not fishy).
  • Don't overcook the fish. Fish cooks quickly, so be careful not to overcook it or it will become dry and tough. Cook the fish just until it is opaque throughout.
  • Use a variety of vegetables. This will add flavor, color, and nutrients to your stew. Some good choices include fennel, carrots, celery, potatoes, and tomatoes.
  • Season your stew well. Use a combination of salt, pepper, garlic, and herbs to taste. You can also add a splash of white wine or lemon juice to brighten the flavors.
  • Serve your stew with crusty bread or rice. This will help to soak up the delicious broth.

Conclusion:

Fish and fennel stew is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and nutrients, and it is sure to please everyone at the table. So next time you are looking for a quick and easy seafood dish, give this fish and fennel stew a try. You won't be disappointed!
