1 cup mayo
2 tablespoons capers, drained and chopped
2 tablespoons pickle relish
1 tablespoon fresh lemon juice
1 1/2 teaspoons white wine vinegar
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
1 1/2 cups red cabbage, sliced thin
1/4 cup fresh parsley leaves, chopped
1 medium bulb fennel, trimmed and thinly sliced, save fronds for garnish
2 tablespoons fresh lemon juice (from about 1 lemon)
2 tablespoons Dijon mustard
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
6 cups peanut oil, for frying
2 cups plus 1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon table salt
One 12-ounce bottle good beer (Irish stout preferred)
1 egg, lightly beaten
1 pound cod fillet, cut into pieces the length of the buns
Kosher salt and freshly ground black pepper
8 parker house rolls, buttered and griddled until toasted

Steps:

  • For the caper lemon tartar sauce: Mix the mayo, capers, relish, lemon juice, vinegar and Worcestershire sauce in a bowl. Season with salt and pepper, cover and refrigerate for 15 minutes marry the flavors.

  • For the fish: Heat the oil to 375 degrees F in a heavy-bottomed Dutch oven or deep fryer.
  • Whisk 2 cups flour, baking powder and salt into a bowl. Add the beer and egg and mix until combined.
  • Sprinkle the fish with salt and pepper. Dredge the fish in the remaining 1/2 cup flour, shake off any excess, then dunk into the batter mixture, letting the excess drip off. Fry the fish in the hot oil until golden brown and crispy, 4 to 5 minutes.
  • For the sandwich build: Place the hot, fried fish on the rolls. Then top with the slaw and slather the top bun in the tartar sauce. Garnish with a fennel frond. Grab with both hands and bite hard.

When I want a burger but also want the flavors of the Hawaiian islands, these sliders are my go-to recipe. Teriyaki and pineapple instantly remind me of hanging out with my island friends, cooking and eating. I hope these also transport you there.

1 pound ground beef (use your favorite burger blend)
Kosher salt and freshly ground black pepper
Neutral oil, for greasing
4 canned or fresh pineapple rings
1 cup teriyaki sauce (store-bought or homemade)
4 slices American cheese
4 Hawaiian sweet rolls, split
4 very thin slices red onion, plus more if desired
1 Roma tomato, thinly sliced
1 cup shredded iceberg lettuce
Ketchup, mayo or mustard (optional)
1 cup Hawaiian sweet onion potato chips

Steps:

  • Preheat a grill or large grill pan to high for about 5 minutes.
  • Form the beef into four round patties, about 1/4 pound each. Season the patties generously with salt and pepper.
  • Lightly oil the grates or grill pan with clean paper towels. Grill the patties and pineapple rings, brushing them with some of the teriyaki sauce. Flip the pineapple rings when grill marks form, after about 1 minute and brush with more teriyaki sauce. Grill the other side of the pineapple until grill marks form, about 1 more minute, then remove from the heat and set aside.
  • Grill the patties until you get nice deep char marks, about 3 minutes. Flip and brush with more teriyaki sauce, then top each patty with a cheese slice. When you hit your desired doneness, remove the patties from the grill and let rest. Toast the rolls for 10 seconds on each side then remove to a plate.
  • To assemble each slider, place a bottom bun on a plate. Top with a cheese patty then a pineapple ring. Top with onion, tomato and lettuce. If you are adding ketchup, mayo or mustard, this is the time. Top with 1/4 cup of the potato chips, then gently press the top bun on it.

  • Soak the fish in milk for 10-15 minutes before frying to help keep it moist.
  • Season the fish fillets with salt, pepper, and paprika before coating in the batter.
