Carrots and sugar sweeten the turnip in this side dish. A must for my family's Thanksgiving and Christmas dinners. The recipe is often requested.

3 large carrots, cubed
1 large turnip, cubed
3 tablespoons softened butter
½ teaspoon salt
¼ cup all-purpose flour
¼ cup white sugar
2 eggs
½ cup milk
2 tablespoons white sugar
¼ teaspoon ground cinnamon

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Place the carrot and turnip cubes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Return the carrots and turnips to the pot, and mash well with the butter, salt, flour and 1/4 cup of sugar. Whisk together the eggs and milk in a bowl, then stir into the mashed carrot mixture until blended. Scrape into the prepared casserole dish. Stir together 2 tablespoons of sugar with the cinnamon in a small bowl, and sprinkle over the top of the carrot mash.
  • Bake in the preheated oven until the carrot mash has slightly firmed and the top has begun to turn golden brown, about 45 minutes.

1/8 cup breadcrumbs
1/2 cup butter
1 large egg
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon ginger powder
1/2 teaspoon ground nutmeg

Steps:

  • Boil turnip till tender (15-20 minutes). Remove turnip and allow to cool.
  • When cooled, mash turnip with potato masher or ricer in a medium bowl. Mix in all other ingredients.
  • Put mixture in casserole dish and bake in oven at 325 degrees F for one hour. Casserole should be brown and fully cooked through.
  • Note: in the USA, "yellow turnips" are sold as "rutabagas".

1 large turnip, peeled and cut into chunks
3 tablespoons unsalted butter, softened
1/2 teaspoon salt
1/4 cup all-purpose flour
1/4 cup granulated sugar
2 eggs
1/2 cup milk
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°F Coat a 2 quart casserole dish with nonstick cooking spray.
  • Combine carrot and turnip chunks in a large pot. Pour in enough water to cover them. Add salt.
  • Bring the pot to a boil over high heat. Reduce heat to medium-low and simmer for 20 minutes until the carrots and turnip are tender. Drain and allow to cool for 1 or 2 minutes.
  • Return them to the pot and mash them.
  • Add butter, salt, flour and 1/4 cup sugar. Mix well.
  • Combine eggs and milk in a bowl and whisk well.
  • Add the milk mixture to the carrot mixture. Blend well.
  • Transfer the mixture to the prepared casserole dish.
  • In a small bowl, mix together 2 tablespoons sugar and cinnamon. Sprinkle over the mixture in the casserole.
  • Bake for 45 minutes or until the top starts to turn golden brown.
  • Serve hot.
