My pastor's wife is Finnish (her parents came from Finland) and this recipe of hers reminded me of the Danish Aebelskivers. Seems like pancakes are a real Scandanavian staple. They could be made in the Aebelskiver pan.

LATTYJA (FINNISH CREPES/PANCAKES)
My mother-in-law is from Finland. She makes these little crepes for the grandchildren as a treat. They are great when served with sugar, jam or preserves. My husband and I make them with buttermilk, but my MIL uses regular milk. Your choice, depending on the flavor you like the most.

Steps:
- Use a bowl large enough to hold all ingredients.
- Beat eggs, sugar and salt together.
- Add flour, milk (1% or 2% can also be used) and melted butter.
- Beat with whisk or hand mixer until not lumpy.
- Adjust the mixture by adding additional milk to thin it. Thinner mixture works better.
- You can make the mixture ahead of time and refrigerate; however you will need to add additional milk to thin it for frying.
- Heat a non-stick pan at medium-low, add butter to coat the surface; use only enough to coat the pan. (We use a cast-iron mini-round indented pan for ours that acutally came from Sweden - thanks for reminding me to add this!).
- While lifting the pan by the handle with one hand, pour some of the mixture onto the frying pan.
- Tilt the pan so that the mix coats the surface of the frying pan; return to heat.
- Cook until the crepe starts to brown; cook the other side until brown circles start to form.
- Move the crepe around the pan to keep the pan greased and remove the crepe.
- You can put sugar, jams or preserves onto the crepe and roll up to eat, or just dip and eat off of the plate. Serve with strawberry jam and whipped cream for the traditional Finnish dish.
- They don't stay hot for long, so eat up while you can or there won't be any left for you!

FINNISH PANCAKES
Steps:
- Add vinegar to milk in a medium mixing bowl. Stir and let stand for a few minutes. Add the sugar and eggs. Beat until combined and eggs are thoroughly mixed. Continue mixing at medium speed while adding flour in 1/4 cup increments, mixing thoroughly inbetween. Continue adding flour until until the thickness of the batter is such that drawing the beater across the surface while mixing leaves texture on the surface which disappears quickly. Thickening the batter too much will cause the pancakes to be overly dense. You may find that you have not used all the flour called for (2 cups per serving). Heat your favorite fry pan (I like to use a cast iron skillet) to medium high. Add a little frying oil followed by the pancake batter. Pancakes of all sizes work just as well. When the pancakes begin to brown on the underside, flip them and brown on the other side until they are done. These panackes can be eaten plain, with a little powdered sugar sprinkled on them or with your choice of syrup. Enjoy!
Tips:
- Use fresh, high-quality ingredients. Fresh milk, eggs, and butter will give your pancakes a better flavor and texture.
- Don't overmix the batter. Overmixing can make your pancakes tough and dense. Mix just until the ingredients are combined.
- Let the batter rest for at least 30 minutes before cooking. This will allow the gluten in the flour to relax, which will make your pancakes lighter and fluffier.
- Cook your pancakes over medium heat. High heat will make the outside of your pancakes brown too quickly, while the inside remains uncooked. Medium heat will allow them to cook evenly all the way through.
- Flip your pancakes only once. Flipping them too often will make them dry and tough. Flip them only when the edges start to curl up and the bottom is golden brown.
- Serve your pancakes immediately with your favorite toppings. Pancakes are best served hot off the griddle, with butter, syrup, fruit, or whipped cream.
Conclusion:
Finnish pancakes are a delicious and versatile breakfast or brunch dish. They can be served with a variety of toppings, making them a great option for both adults and children. With just a few simple ingredients and a little bit of time, you can easily make these pancakes at home. So next time you're looking for a tasty and satisfying meal, give Finnish pancakes a try.
