SAILOR'S BEEF CASSEROLE (MERIMIESPIHVI) - FINNISH

Sailor's Beef Casserole (Merimiespihvi) - Finnish image

This is from the "Best of Finnish Cooking". The author put it together to pass on her heritage to her sons. The author wrote that Finnish food is salty, but use your own judgement and discretion when it comes to the amount that you use. Do not use anything except pale lager for the beer. I made it with Guinness; it completely overpowered the dish and turned bitter.

Provided by Debbie R.

Categories     One Dish Meal

Time 3h

Yield 4-6 serving(s)

Number Of Ingredients 11

1 lb round steak (or brisket)
2 tablespoons butter (or vegetable oil)
2 medium onions, peeled and thinly sliced
8 medium potatoes (about 2.2 pounds)
2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon ground allspice
1 cup beer (pale lager only!!)
1 cup beef broth
1 bay leaf
1 tablespoon chopped parsley

Steps:

  • Preheat oven to 350.
  • Cut the meat into slices across the grain. In a hot skillet, brown them quickly on both sides using only half the butter or oil. Remove to a plate.
  • Lower the heat and cook the onions slowly in the rest of the butter until they are soft and golden. If they become browned, they'll be a completely different taste than when they're golden.
  • Peel and slice the potatoes as thinly as possible.
  • In a 1 quart casserole dish, layer the potatoes with the browned meat and onions, sprinkling each meat layer with a litle of the salt, pepper and allspice. I started with a layer of potatoes, meat, onions, spice. Repeated two more times for a total of three layers, but make the last layer one of potatoes.
  • Rinse the skillet with the beer and the broth. Pour into the casserole. Add the bay leaf.
  • Cover tightly, but no need for foil under the lid. Bake for 2 hours, or until the meat is tender and potatoes are soft.
  • Sprinkle with parsley and serve. Traditionally served with pickled beets.

A VEGETARIAN FINNISH MASHED POTATO CASSEROLE

A Vegetarian Finnish Mashed Potato Casserole image

I love mashed potatoes, but I've never tried them quite like this! I found this recipe at potatopatchrecipes.com and added it for Zaar World Tour 6.

Provided by Enjolinfam

Categories     Potato

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 10

3/4 cup butter (at room temperature) or 3/4 cup margarine, plus extra for the dish (at room temperature)
7 cups vegetarian chicken broth, I use McKays Chicken Seasoning mixed with water
3 lbs russet potatoes, peeled and cut into 1 1/2 inch pieces
1 1/2 lbs rutabagas, peeled and cut into 1/2 inch pieces
1 1/2 lbs parsnips, peeled and cut into 1 1/2 inch pieces
8 garlic cloves
1 bay leaf
salt & pepper, to taste
1 teaspoon dried thyme
3 large onions, thinly sliced

Steps:

  • Preheat oven to 375F and butter a 9×13 inch glass baking dish.
  • Combine the broth, potatoes, rutabagas, parsnips, garlic, and bay leaf in a 4 quart soup pot, and bring the broth to a boil. Reduce the heat, cover partially, and simmer until the vegetables are very tender, about 30 minutes. Drain well. Remove the bay leaf.
  • Transfer the vegetables to a large bowl and add 1/2 cup of the butter or margarine. Using an electric mixer, beat the vegetables until mashed but still chunky.
  • Season with salt, pepper, and thyme and transfer the vegetables to the buttered baking dish.
  • Melt the remaining 1/4 cup butter or margarine in a large, heavy nonstick skillet over medium-high heat.
  • Add the sliced onions and sauté until beginning to brown, about 5 minutes.
  • Reduce the heat to medium-low and cook until the onions are tender and golden brown, about 15 minutes. Season the onions with salt and pepper and spread evenly over the mashed vegetables.
  • Bake uncovered, until heated through and the top begins to crisp, about 25 minutes.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the casserole will taste. This is especially true for the vegetables, which should be crisp and flavorful.
  • Don't overcook the vegetables: The vegetables should be cooked until they are tender but still retain some of their crunch. Overcooked vegetables will become mushy and lose their flavor.
  • Use a good quality cheese: The cheese is one of the main ingredients in the casserole, so it's important to use a good quality cheese that melts well. A sharp cheddar cheese or a Gruyère cheese are both good options.
  • Season the casserole well: Don't be afraid to season the casserole well with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika, to taste.
  • Let the casserole rest before serving: After the casserole is cooked, let it rest for a few minutes before serving. This will allow the flavors to meld together and the casserole to set.

Conclusion:

Finnish casserole is a delicious and comforting dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a Finnish casserole that is sure to be a hit with your family and friends.
