Strawberry Cream Cheese-filled Banana Bread Recipe by Tasty image

Here's what you need: light cream cheese, strawberry, honey, ripe bananas, large eggs, 2% plain greek yogurt, honey, wheat flour, baking soda, baking powder

Provided by Joey Firoben

Categories     Breakfast

Yield 12 servings

Number Of Ingredients 10

4 oz light cream cheese, also called Neufchatel, room temperature
½ cup strawberry, diced
1 tablespoon honey
3 ripe bananas
2 large eggs
⅓ cup 2% plain greek yogurt
½ cup honey
1 ½ cups wheat flour
1 teaspoon baking soda
½ teaspoon baking powder

Steps:

  • In a medium bowl, mix the cream cheese, 1 tablespoon of honey, and strawberries until smooth.
  • Microwave the cream cheese mixture in 30 second intervals for a total of 5 minutes, stirring between each interval. This helps cook out the moisture so that the mixture doesn't create a large pocket of steam in the bread.
  • Preheat oven to 350°F (180°C).
  • In a bowl, mash the bananas with a fork.
  • Add the eggs and mix until well combined and frothy.
  • Add the Greek yogurt and honey, and mix until incorporated.
  • Sprinkle in the whole wheat flour, baking soda, and baking powder, and fold the batter together with a spatula.
  • Pour ¾ of the banana bread batter into a greased loaf pan, smoothing it into an even layer with the spatula.
  • Pour in the cream cheese filling, making sure to keep it away from the edge of the pan.
  • Pour the remaining banana bread batter over the cream cheese filling and smooth the top with a spatula.
  • Bake for 50-55 minutes, until the top springs back when lightly touched.
  • Let the pan cool for 15 minute before removing the loaf from the pan.
  • Allow the bread to cool at least 1 hour before slicing and serving.
  • Enjoy!

Time 1h10m

Yield 20

Number Of Ingredients 10

3 cups all-purpose flour
2 cups white sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 ½ cups vegetable oil
4 eggs, beaten
1 teaspoon red food coloring
2 (10 ounce) packages frozen strawberries, thawed and drained
1 (8 ounce) package cream cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
  • In a large mixing bowl, stir together the flour, sugar, salt, cinnamon and baking soda. Add oil, beaten eggs, food coloring; mix well. Drain the strawberries and reserve 1/2 cup of the juice for the filling. Fold in the drained strawberries. Pour batter evenly into the prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
  • In a medium mixing bowl, mix together the cream cheese with 1/2 cup of the reserved strawberry juice. Slice the loaf twice horizontally to make three layers. Spread the cream cheese mixture between the layers and reassemble the loaf. Wrap loaves in plastic and chill in the refrigerator to set the filling. Slice and serve chilled.

Tips:

  • Prep your berries: Wash and hull your strawberries thoroughly before using them. Fresh strawberries are best, but frozen strawberries that have been thawed and drained can also be used.
  • Cream your butter and sugar together until light and fluffy: This will help to create a smooth, even batter.
  • Gradually add the eggs, one at a time, beating well after each addition: This will help to prevent the batter from curdling.
  • Add the dry ingredients to the wet ingredients in three additions, alternating with the buttermilk: This will help to ensure that the batter is evenly mixed.
  • Fill your prepared loaf pan with the batter and top with the remaining strawberries: The strawberries will sink into the batter as it bakes, creating a beautiful marbled effect.
  • Bake the bread for 55-60 minutes, or until a toothpick inserted into the center comes out clean: Every oven is different, so keep an eye on the bread to make sure it doesn't overbake.
  • Allow the bread to cool completely before slicing and serving: This will help to ensure that the bread holds its shape.

Conclusion:

Strawberry bread is a delicious and easy-to-make treat that is perfect for any occasion. With its moist, flavorful crumb and sweet, juicy strawberries, this bread is sure to be a hit with everyone who tries it. So next time you're looking for a special bread to bake, give this filled strawberry bread a try. You won't be disappointed!
