STEAK AU POIVRE

Categories     main-dish

Time 53m

Yield 4 servings

Number Of Ingredients 7

4 tenderloin steaks, 6 to 8 ounces each and no more than 1 1/2 inches thick
Kosher salt
2 tablespoons whole peppercorns
1 tablespoon unsalted butter
1 teaspoon olive oil
1/3 cup Cognac, plus 1 teaspoon
1 cup heavy cream

Steps:

  • Remove the steaks from the refrigerator for at least 30 minutes and up to 1 hour prior to cooking. Sprinkle all sides with salt.
  • Coarsely crush the peppercorns with a mortar and pestle, the bottom of a cast iron skillet, or using a mallet and pie pan. Spread the peppercorns evenly onto a plate. Press the fillets, on both sides, into the pepper until it coats the surface. Set aside.
  • In a medium skillet over medium heat, melt the butter and olive oil. As soon as the butter and oil begin to turn golden and smoke, gently place the steaks in the pan. For medium-rare, cook for 4 minutes on each side. Once done, remove the steaks to a plate, tent with foil and set aside. Pour off the excess fat but do not wipe or scrape the pan clean.
  • Off of the heat, add 1/3 cup Cognac to the pan and carefully ignite the alcohol with a long match or firestick. Gently shake pan until the flames die. Return the pan to medium heat and add the cream. Bring the mixture to a boil and whisk until the sauce coats the back of a spoon, approximately 5 to 6 minutes. Add the teaspoon of Cognac and season, to taste, with salt. Add the steaks back to the pan, spoon the sauce over, and serve.

Fine sea salt

1 cup heavy cream
1 tablespoon Worcestershire sauce
2 teaspoons green peppercorns in brine, drained
1/2 beef bouillon cube
1/4 cup cognac

6 sprigs thyme, for garnish
Coarse sea salt, for garnish

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 22

Nonstick cooking spray
2 tablespoons whole black peppercorns, cracked
1 tablespoon whole green peppercorns, cracked
1 tablespoon whole pink peppercorns, cracked
7 tablespoons grapeseed oil, divided
1 tablespoon kosher salt
4 center-cut beef filets, each about 2 inches thick
1 tablespoon whole black peppercorns, toasted
2 tablespoons unsalted butter
1 tablespoon grapeseed oil
1 shallot, minced
2 cloves garlic, thinly sliced
Kosher salt
1/3 cup cognac
3/4 cup beef stock
2 teaspoons Calabrian chile paste
1 1/2 teaspoons Dijon mustard
Picked leaves of 3 sprigs fresh thyme
1/2 cup heavy cream
8 ounces jumbo lump crabmeat
1 tablespoon finely chopped chives
1 tablespoon finely chopped fresh parsley

Steps:

  • For the filets: Heat the oven to 250 degrees F. Spray a wire rack fitted into a sheet pan with nonstick cooking spray and set aside.
  • In a medium pot, heat the black, green and pink peppercorns and 5 tablespoons of the oil over low heat. Cook, stirring frequently, until you see tiny bubbles, 6 to 7 minutes. Remove from the heat to cool. Stir the salt into the pepper mixture to form a paste.
  • Dip each filet all around in the peppercorn paste and place on the prepared sheet pan. Place in the oven to reverse sear until the internal temperature hits 120 degrees F, 25 to 35 minutes.
  • Heat the remaining 2 tablespoons oil in a large heavy skillet over medium-high heat. Sear the first side of the filets until a very dark golden crust forms, 2 to 3 minutes. Flip and repeat. Remove from the skillet and let rest on the wire-racked sheet pan, lightly tented with foil, for 5 minutes.
  • For the crab au poivre: While the filets are cooking, coarsely crush the black peppercorns with either a mortar and pestle or the bottom of a heavy frying pan. Set aside.
  • In a large saute pan, heat the butter and oil over medium heat until the butter melts. Add the shallots and garlic and season with salt; cook, stirring occasionally, until soft but not brown, about 5 minutes. Add the cognac and cook, scraping up any brown bits on the bottom of the pan, until it has almost evaporated, 1 to 2 minutes. Add the stock, chile paste, Dijon, thyme, the reserved crushed peppercorns, 1/4 teaspoon salt and cook until reduced by half, 3 to 5 minutes. Add the cream and simmer until the sauce is reduced by half, thickened and coats the back of a spoon, 3 to 4 minutes. Gently stir in the crabmeat. Fold in the chives and parsley. Serve atop steaks.

STEAK AU POIVRE

Steak au Poivre image

Provided by Tyler Florence

Categories     main-dish

Yield 8 servings

Number Of Ingredients 13

1 (4-pound) beef tenderloin
Kosher salt and coarsely ground black pepper
2 tablespoons vegetable oil
1 handful fresh thyme sprigs
1 handful fresh rosemary sprigs
2 shallots, finely chopped
1/2 cup Cognac or brandy
1/2 cup demi-glace or dark stock
1/4 cup heavy cream
1 tablespoon Dijon mustard
2 tablespoons jarred green peppercorns, drained
1/4 cup chopped fresh flat-leaf parsley
1 bunch watercress, stems trimmed

Steps:

  • Preheat the oven to 400 degrees F.
  • Pat the tenderloin dry with paper towels and sprinkle all sides with a generous amount of salt and pepper - you should see the seasoning on the meat. Place a large skillet or roasting pan over medium-high flame, drizzle with the oil, and just when it begins to smoke lay the tenderloin in the hot pan. Brown on all sides until a crust forms and the meat is well-seared, about 7 minutes total. Toss the fresh thyme and rosemary on top of the tenderloin and transfer the whole thing to the oven; roast for 20 to 25 minutes for medium-rare.
  • Remove the tenderloin to a cutting board to rest for 10 minutes before carving. Pour off the excess fat from the pan and put it back on the stove over medium-high heat. Add the shallots to the pan drippings, saute, stirring with a spoon to scrape up the flavors in the bottom. Take the pan off the heat and pour in the cognac (premeasure - never pour directly from the bottle!) Put the pan back on the heat and tilt it slightly over the burner to ignite the alcohol, or light with a kitchen lighter. The cognac will flame for a few seconds then go out as the alcohol burns off. Stir in the demi-glace and cream, simmer for about 1 minute to thicken the sauce so it coats a spoon. Finish the sauce by stirring in the mustard and peppercorns until incorporated. Taste and season with salt, if necessary.
  • To serve: pile the watercress on a serving platter, cut the tenderloin into 1/2-inch thick slices and arrange it on top of the greens. Drizzle the sauce over the beef and garnish with chopped parsley. Serve the steak au poivre with pommes frites.

FILET OF BEEF AU POIVRE

Steak au Poivre is a classic dish of French-style Pepper Steak. It produces an elegant dish that's suitable for company or any special occasion. I like it with a side of garlic-sautéed mushrooms and roasted baby red potatoes, but nearly any vegetable side dish would be great with this dish.

SIMPLE STEAK AU POIVRE

Simple Steak au Poivre image

Steak au poivre sounds as if it would be difficult, but it is actually quite simple to prepare, and makes an easy and elegant (perhaps somewhat pricy) meal. Essentially it is a sautéed steak, with a quick pan sauce. This version made with black peppercorns and Sichuan pepper tastes bright but not overpoweringly peppery or boozy. If you serve it with scallion-mashed potatoes, your home cooked steak au poivre will put the best neighborhood bistro to shame.

Time 30m

Yield 4 servings

Number Of Ingredients 10

4 beef tenderloin steaks, 6 ounces each, cut 1 inch thick
Salt
1 tablespoon coarsely crushed black pepper
1 teaspoon coarsely crushed Sichuan pepper
2 tablespoons unsalted butter
2 large shallots, finely diced
1 1/2 cups rich beef or chicken broth
1 tablespoon Cognac or bourbon
1/4 cup crème fraîche
1 bunch watercress, for garnish

Steps:

  • Put steaks in a shallow dish and season well on both sides with salt. Sprinkle black pepper and Sichuan pepper evenly over steaks. Press pepper into both sides with hands and leave for 10 minutes.
  • Put a large cast iron skillet over high heat. When surface is nearly smoking, swirl 1 tablespoon butter in the pan and add steaks. Adjust heat as necessary to keep steaks sizzling briskly.
  • Cook for 2 minutes on first side; seared side should be nicely browned. Flip and cook for 2 minutes more. Transfer steaks to a warm platter.
  • Make the sauce: Add 1 tablespoon butter to the pan. Add shallots and sauté for a minute or so, stirring, until they begin to brown. Add broth and bring to a brisk simmer. Add Cognac and continue to simmer until reduced by half, 3 to 4 minutes. Stir in crème fraîche and cook until sauce is lightly thickened.
  • Return steaks to pan to warm, spooning sauce over them and turning once. Arrange steaks on platter or individual plates and top with more sauce. Garnish with bouquets of watercress and serve immediately.

FILET OF BEEF AU POIVRE

FILET OF BEEF AU POIVRE image

Categories     Beef

Yield 2 people

Number Of Ingredients 9

Two 8-ounce filet mignon steaks
Kosher salt
1 tablespoon black peppercorns, coarsely ground
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
2 tablespoons minced shallots
1/2 cup canned beef broth
1/4 cup Cognac or brandy
1/4 cup heavy whipping cream

Steps:

  • Preheat the oven to 375 degrees F. Season both sides of the filet mignon with salt, and then press the black pepper evenly onto both sides of the filets. Allow to rest at room temperature for 15 minutes. In a large heavy, ovenproof skillet, heat the butter and olive oil over medium-high heat until almost smoking. Place the filets in the hot pan and cook until well-seared on one side, about 3 minutes. Turn the filets over and then transfer the pan to the oven. Cook for about 10 minutes, or until the filets are medium-rare (internal temperature of 125-130 degrees F). Remove the filets to a platter to rest, and tent with aluminum foil to keep warm. Return the pan to the stove over medium-high heat. Add the shallots to the pan and cook for 2 minutes. Add the beef broth and allow to reduce by half, scraping the brown bits from the bottom of the pan. Carefully add the Cognac (use caution, it may ignite), and cook over allow to simmer for about 2 minutes. Lower the heat to medium-low, add the cream, and simmer for 3-4 minutes. Season with salt to taste. Serve the steaks with the sauce poured on top.

Tips:

  • When choosing a cut of beef for this recipe, look for a tenderloin or strip steak that is at least 1 inch thick.
  • Make sure to trim any excess fat from the steak before cooking.
  • To achieve a perfect medium-rare doneness, cook the steak for about 5-7 minutes per side in a hot skillet.
  • Let the steak rest for a few minutes before slicing and serving.
  • For a more flavorful sauce, use a combination of cognac and brandy.
  • If you don't have any cream on hand, you can substitute milk or even water.
  • To make the sauce ahead of time, simply prepare it up to the point of adding the cream and butter. Then, reheat it over low heat just before serving.

Conclusion:

Filet of beef au poivre is a classic French dish that is sure to impress your guests. It's a flavorful and elegant dish that is perfect for a special occasion. With its tender steak, creamy sauce, and peppery flavor, this dish is sure to be a hit.
