4 New York Steak strip steaks ((Porterhouse steaks))
Salt and pepper (to season)
1-2 tablespoons olive oil
3 tablespoons unsalted butter, (divided)
8 ounces (250 g) shrimp (deveined, tails on or off)
4 cloves garlic ((or 1 tablespoons minced garlic))
1/4 cup dry white wine (or low-sodium chicken broth)
3/4 cup heavy cream* ((thickened cream))
1/4 cup fresh shredded parmesan cheese
Salt and pepper (to taste)
1 tablespoon fresh parsley (chopped)

Steps:

  • Pat steaks dry with paper towel. Season with salt and pepper.
  • Heat a large cast iron skillet or grill over medium-high heat. Sear/grill steaks for 4-5 minutes each side until browned and cooked to desired doneness.
  • Transfer steaks to a warm plate; set aside.
  • Melt 2 tablespoons butter in the skillet (if using a skillet). Add shrimp to the skillet, season with salt and pepper and sear until just cooked and pink -- about 2 minutes. Transfer to a bowl; set aside.(For grill: grill seasoned shrimp while brushing with melted butter until done.)
  • To the same skillet, add the remaining butter, add the garlic, sauté until fragrant (about one minute). (If grilling meats, you will need to grab a pan or skillet for this step.)
  • Pour in the white wine (or broth), and allow to reduce to half, while scraping any bits off of the bottom of the pan.
  • Reduce heat to low-medium heat, add the cream and bring to a simmer, while stirring occasionally. Add in the parmesan cheese; allow to melt through the simmering sauce. Season with salt and pepper to your taste.
  • Add the shrimp back into the pan; sprinkle with the parsley, and stir through.
  • Serve with steaks.

3 slices bacon, chopped
1 tablespoon butter
4 shallots, diced
¼ cup half-and-half cream
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.

Time 25m

Yield 4

Number Of Ingredients 7

¼ cup coarsely crushed black peppercorns
4 (6 ounce) 1 1/2 inch thick filet mignon steaks
salt to taste
1 tablespoon butter
1 teaspoon olive oil
⅓ cup beef broth
1 cup heavy cream

Steps:

  • Place the peppercorns into a shallow bowl. Sprinkle the beef tenderloin filets with salt on both sides, and coat both sides with crushed peppercorns.

An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove the steaks to platter, and cover tightly with foil.
  • Pour the beef broth into the skillet, and use a whisk to stir the broth and scrape up any dissolved brown flavor bits from the skillet. 12 slices thick sliced bacon, chopped

Tips:

  • Choose high-quality ingredients: Use fresh, succulent shrimp and tender, well-marbled filet mignon for the best results.
  • Cook the shrimp carefully: Overcooking can make the shrimp tough and rubbery. Cook them just until they turn opaque and pink.
  • Make sure the sauce is flavorful: Use a combination of garlic, shallots, white wine, and cream to create a rich and flavorful sauce.
  • Don't overcrowd the pan: When searing the filet mignon, make sure not to overcrowd the pan or the meat will not cook evenly.
  • Rest the meat before slicing: Let the filet mignon rest for a few minutes before slicing to allow the juices to redistribute.
  • Serve immediately: This dish is best served immediately, while the shrimp and filet mignon are still hot and the sauce is warm.

Conclusion:

This filet mignon with garlic shrimp cream sauce is a delicious and elegant dish that is perfect for a special occasion. The tender filet mignon, succulent shrimp, and flavorful sauce come together to create a truly memorable meal. With careful preparation and attention to detail, you can easily create this dish at home and impress your guests. So next time you're looking for a special meal to cook, give this recipe a try.
