Yield Makes 1 1/2 cups

Number Of Ingredients 7

3/4 cup dried Black Mission figs (4 ounces)
1/4 cup balsamic vinegar
1/4 cup tomato paste
1 1/2 teaspoons coarse salt
2 teaspoons safflower oil
2 minced garlic cloves
1 dried bay leaf

Steps:

  • Soak figs in 2 cups boiling water until soft, about 5 minutes; drain. Pulse with vinegar, tomato paste, and 1 teaspoon salt in a food processor, scraping down sides often, until pureed, about 3 1/2 minutes. Heat oil in a saucepan over medium heat. Cook garlic for 30 seconds. Pour in fig puree. Whisk in 1 cup room-temperature water and bay leaf. Reduce heat to low. Simmer for 15 minutes. Season with 1/2 teaspoon salt. Discard bay leaf. Refrigerate until ready to use (up to 2 months).

Tips:

  • Use ripe figs: The riper the figs, the sweeter and more flavorful your sauce will be.
  • Roast the figs: Roasting the figs intensifies their flavor and makes them easier to blend.
  • Use a variety of spices: The spices in this recipe (cumin, smoked paprika, and chili powder) add depth and complexity of flavor. Feel free to experiment with other spices that you like.
  • Let the sauce simmer: Simmering the sauce allows the flavors to meld and develop.
  • Taste the sauce and adjust the seasonings: The sauce should be sweet, tangy, and slightly spicy. Adjust the seasonings to your liking.

Conclusion:

This figgy barbecue sauce is a delicious and versatile condiment that can be used on chicken, pork, beef, or fish. It's also great as a dipping sauce for appetizers or as a glaze for vegetables. With its unique flavor profile, this sauce is sure to be a hit at your next barbecue or party.
