Number Of Ingredients 8

3/4 cup dry red wine, such as Syrah or Zinfandel
3/4 cup pomegranate juice
1/2 cup sugar
1 cinnamon stick
2 teaspoons grated orange peel
6 Bosc pears with stems, peeled
Vanilla ice cream

FOIE GRAS ON A BED OF PEARS

Foie Gras on a Bed of Pears image

This is a delicious and elegant first course. I have also made this with apples, which came out very well, but pears are truly ideal for complementing the taste of the foie gras.

Time 25m

Yield 2 serving(s)

Number Of Ingredients 8

2 slices foie gras, approx. 2 oz. each
salt and pepper, to taste
1 ripe pear, peeled and thinly sliced
1 tablespoon butter
1 teaspoon brown sugar
1 1/2 tablespoons balsamic vinegar
1/4 cup cider or 1/4 cup apple juice
fresh rosemary, to taste

Steps:

  • Srinkle salt and pepper on both sides of the foie gras and keep at room temperature.
  • Melt the butter in a frying pan over medium-high heat. Add pear slices and brown sugar. Caramelize, turning often. Place the caramelized pears on two warm plates.
  • Sear the foie gras on each side over medium-high heat in the frying pan (cooking time is delicate as it can vary from 15 seconds to 1 minute per side, depending on the thickness of the foie gras).
  • Place the foie gras on the pears.
  • Deglaze the frying pan with the balsamic vinegar, then add the cider (or apple juice) and the rosemary. Let it reduce a little, then pour over the foie gras. Decorate with a sprig of fresh rosemary.
  • Try serving with a little green salad, using any remaining sauce as the dressing.

Tips:

  • Choose ripe but firm pears: Bosc pears are ideal for this recipe as they hold their shape well when cooked. Make sure the pears are ripe, but not too soft, otherwise they will break down during cooking.
  • Use a good quality balsamic vinegar: The balsamic vinegar is a key ingredient in the glaze, so it's important to use a good quality one. Look for a balsamic vinegar that is aged for at least 12 years for the best flavor.
  • Don't overcrowd the pears in the pan: When cooking the pears, make sure they are not overcrowded in the pan. If the pears are too close together, they will not cook evenly.
  • Baste the pears frequently: Basting the pears with the glaze helps to keep them moist and flavorful. Baste the pears every few minutes during cooking.
  • Serve the pears warm or at room temperature: Fig glazed pears can be served warm or at room temperature. If you are serving them warm, reheat them gently in the microwave or oven before serving.

Conclusion:

Fig glazed pears are a delicious and elegant dessert that is perfect for any occasion. The combination of sweet figs, tangy balsamic vinegar, and juicy pears is simply irresistible. This recipe is easy to follow and can be made with just a few simple ingredients. So next time you're looking for a special dessert, give fig glazed pears a try. You won't be disappointed!
