1 cup frozen corn

1 tablespoon chili powder
1 teaspoon minced garlic
1 teaspoon ground cumin
1 teaspoon salt
¼ teaspoon red pepper flakes, or to taste

1 cup shredded Cheddar cheese
1 ½ cups milk
2 tablespoons butter
1 tablespoon white sugar

Steps:

1 garlic clove, minced

1/4 cup sliced ripe olives
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1 large egg
1/3 cup 2% milk
1 package (8-1/2 ounces) cornbread/muffin mix
Dash paprika
1/2 cup shredded cheddar cheese

Steps:

1 pound lean ground beef
½ cup chopped onion (about ½ of a small onion)
15 ounce can diced tomatoes (drained (or 15 oz can tomato sauce))
1 cup frozen corn
4 ounce can chopped ripe olives (drained)
4 ounce can chopped green chilies (drained)
1 tablespoon chili powder
½ teaspoon garlic powder
½ teaspoon salt
1 cup cornmeal
1 cup milk
2 tablespoons granulated sugar
2 eggs
½ cup shredded Cheddar cheese
fresh chopped chives or parsley for garnish if desired

Steps:

  • Preheat oven to 350 degrees F. Grease a 9"x9" baking dish or 10-inch oven safe skillet with nonstick cooking spray.
  • Heat a large skillet over medium-high heat. Add ground beef and onion and cook until beef is browned and no longer pink, stirring often. Drain any grease from the pan.

1 small onion (minced)
1 garlic clove (minced)
3 tablespoons butter
1 lb ground beef
1/2 lb pork sausage
1 (28 ounce) can whole tomatoes
1 (15 ounce) can whole kernel corn (drained)
2 teaspoons salt
2 teaspoons chili powder (more to taste)
20 -24 pitted black olives
1 cup cornmeal
1 cup milk
2 eggs (well beaten)
2 cups cheddar cheese (shredded)

Steps:

  • Preheat oven to 350.
  • Saute onion and garlic in butter.
  • Add ground beef and sausage and cook until brown.
  • Add tomatoes (with juice) and crush with spoon or fork (I crush them with my hands before adding, but that's just me).
  • Add corn, salt and chili powder. Heat through.
  • Pour into 13x9 casserole dish.
  • Press olives down into meat mixture until they are just showing.
  • In medium bowl, mix together cornmeal, milk and eggs.
  • Pour over meat mixture and olives.
  • Sprinkle cheese over top.
  • Bake uncovered for 1 hour.
