1 lb lean (at least 80%) ground beef
1 can (15 to 16 oz) spicy chili beans in sauce, undrained
1 cup Old El Paso™ Thick 'n Chunky salsa
2 cups coarsely broken tortilla chips
4 medium green onions, sliced (1/4 cup)
1 medium tomato, chopped (3/4 cup)
1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
Tortilla chips, if desired
Shredded lettuce, if desired
Additional Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in beans and 1 cup salsa. Heat to boiling, stirring occasionally.
  • In ungreased 2-quart casserole, place broken tortilla chips. Top with beef mixture. Sprinkle with onions, tomato and cheese.
  • Bake uncovered 20 to 30 minutes or until hot and bubbly. Arrange tortilla chips around edge of casserole. Serve with lettuce and additional salsa.

3 -4 green onions, chopped save darkest green parts for garnish
1 cup cottage cheese
16 ounces low-fat sour cream
1 1/2 lbs ground beef
1 cup chopped onion
1/2 cup chopped green pepper
3 minced garlic cloves
1 (15 ounce) can petite diced tomatoes, undrained
1 (15 ounce) can black beans, rinsed and drained
1 (6 ounce) can tomato paste
2/3 cup warm water
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4-1/2 teaspoon cayenne pepper
1/4 teaspoon pepper
1/4 teaspoon salt, more to taste
1 (10 ounce) bag corn chips, coarsely crushed, like Fritos
2 1/2 cups Mexican blend cheese or 2 1/2 cups any cheddar cheese
1 (2 1/4 ounce) can sliced black olives, drained (optional)
1 head lettuce, shredded

Steps:

  • Preheat oven to 350. Grease/spray a 13" x 9" casserole dish; set aside.
  • In a bowl, stir together the cottage cheese, sour cream and chopped green onions.
  • In a large skillet, brown/crumble ground beef with onion, green pepper and garlic. Drain and return to the skillet.
  • Add to the skillet, tomatoes, Black beans, tomato paste, water and seasonings. Simmer for about 10-12 minutes, stirring occassionally.
  • Scatter HALF of the coarsely crushed chips on the bottom of the prepared casserole dish.
  • Top with HALF of the beef/bean mixture.
  • Top with HALF of the cottage cheese/sour cream mixture.
  • Sprinkle with HALF of the shredded cheese.
  • Repeat all the layers again, ending with the last of the shredded cheese. Sprinkle top with black olives (optional) and reserved chopped dark green onion parts (optional).
  • Bake at 350 for 25-30 minutes or until heated through.
  • Divide shredded lettuce on plates and spoon casserole over top to serve.

This is from my beloved Betty Crocker cookbook, and it is such a favorite that I want to share it with everybody! It's also a GREAT use for those tortilla chip bits at the bottom of the bag! I've "healthed it up" a bit, but you would never guess from the flavor and the servings are huge! The cookbook says this is 345 cals per serving, 13 g fat.

1 lb ground turkey
1 (15 ounce) can chili beans
1 cup salsa (the hotter the better!!)
2 cups tortilla chips, broken
1/2 cup fat free sour cream
4 green onions, sliced
1 tomatoes, chopped
1 cup reduced-fat cheddar cheese

Steps:

  • Pre-heat oven to 350.
  • Cook turkey over medium heat 8-10 minutes, until no longer pink. Drain if necessary. Stir in beans and salsa and heat to boiling.
  • Place tortilla chips in the bottom of an ungreased 8x8 casserole. Top with turkey/bean mixture. Spread with sour cream, then top with onions, tomatoes, and cheese.

1-1/2 lb. ground beef
1/4 cup water
1/4 lb. (4 oz.) Mexican VELVEETA®, cut up
3/4 cup TACO BELL® Thick & Chunky Medium Salsa
1 pkg. (4.5 oz) TACO BELL® Crunchy Taco Shells (12 shells), crushed
1/2 cup KRAFT Shredded Cheddar & Monterey Jack Cheeses

Steps:

  • Preheat oven to 350°F. Brown meat in large skillet; drain. Add water and VELVEETA; cook until VELVEETA is melted, stirring frequently. Remove from heat. Stir in salsa.
  • Spray 8-inch square baking dish with cooking spray. Place 1/3 of the crushed taco shells in prepared dish; top with 1/2 of the meat mixture. Repeat layers. Top with remaining crushed taco shells; sprinkle with shredded cheese.

This recipe is a favorite of my whole family; even the child who hates meat. I like to experiment with different cheeses or different salsas. I think there are supposed to be 6 servings in this dish but because everyone has seconds it serves 5 with no leftovers. For more servings increase to 1 1/2 lb beef and increase corn bread to 2 boxes and cheese accordingly. Bake in 9x9 or larger casserole dish.

1 lb ground beef
1 package taco seasoning
3/4 cup water
1/2 cup salsa
1 package cornbread mix
2/3 cup shredded cheddar cheese

Steps:

  • Brown ground beef, and drain excess fat.
  • Add water, taco seasoning, and salsa.
  • Cook for 15 minutes or until water is reduced.
  • Place beef in small casserole dish.
  • Sprinkle with 1/3 cup of cheese.

1 1/2 cups chopped onions
1 (16 ounce) jar medium ortega garden-style salsa
2 (1 1/4 ounce) packages taco seasoning mix (I only use about 1 1 /2 packages)
1/4 cup water
1 (16 ounce) bag frozen corn
1 cup sliced ripe olives
2 (8 1/2 ounce) packages Jiffy corn muffin mix
1 1/2 cups cheddar cheese, shredded (the taco blend of cheese works well)
1 (4 ounce) can diced green chilies

Steps:

  • Brown meat and onion until meat is no longer pink. Drain any excess fat.
  • Add taco seasoning, water and salsa. Simmer 5 to 6 minutes until thickened but not dry.
  • Add corn and olives.
  • Spoon into an ungreased 3 1/2 to 4 quart casserole dish.
  • Prepare Corn muffin mix according to instructions on box. Add cheese and chopped green chilies.
