FIESTA GUACAMOLE DIP
Found this delicious recipe in an insert from ol' Elsie Borden. It was stuck inside a cookbook, the recipes dated to 1994! Love the sour cream/taco seasoning combination tucked in between the beans and the avocado spread!

Steps:
- In small bowl, combine refried beans and chilies and spread on large serving plate.
- Combine sour cream and taco seasoning, spoon over bean mixture.
- In small bowl, mash avocados and stir in lemon or lime juice and seasoning salts, then spread over top of sour cream mixture.
- Cover and chill several hours.
- Just before serving, garnish with cheese, tomatoes, green onions and olives, then serve with taco chips.
- Makes 12 to 15 servings.
Tips:
- Use ripe avocados: The riper the avocados, the creamier and more flavorful your guacamole will be. Look for avocados that are dark green or black in color and yield to gentle pressure when squeezed.
- Choose the right tomatoes: Use Roma tomatoes for the best flavor and texture in your guacamole. Roma tomatoes are small, plum-shaped tomatoes with a meaty texture and few seeds.
- Chop the ingredients evenly: Chop the avocados, tomatoes, onions, and cilantro into small, even pieces. This will help the guacamole to have a consistent texture and flavor.
- Use fresh lime juice: Fresh lime juice adds a bright, citrusy flavor to guacamole. Avoid using bottled lime juice, as it can be too acidic and harsh.
- Season to taste: Season the guacamole with salt, pepper, and cumin to taste. Start with a small amount of each seasoning and add more as needed.
- Serve immediately: Guacamole is best served immediately after it is made. If you need to make it ahead of time, cover it tightly with plastic wrap and refrigerate for up to 24 hours.
