2 whole fully baked sweet potatoes (medium or large)
2 Tbsp. extra-virgin olive oil
4 eggs
½ tsp. salt
¼ cup minced fresh parsley

1 small shallot, minced
Juice of 1 lemon

Tips:

  • Start with large, firm potatoes. This will help them hold their shape during baking and prevent them from becoming mushy.
  • Bake the potatoes until they are tender but not overcooked. Overcooked potatoes will be difficult to scoop out and will not hold their shape well.
  • Use a variety of toppings. The possibilities are endless, so get creative and use your favorite ingredients. Some popular options include cheese, bacon, sour cream, salsa, and guacamole.
  • Make it a meal. Fiesta egg potato boats can be served as a main course or a side dish. They are also great for potlucks and parties.
