Number Of Ingredients 6

1 tablespoon olive oil
2 garlic cloves (chopped fine)
1 small tomatoes, peeled, seeded and chopped (about 1/4 cup)
1/2 cup distilled white vinegar
1/2 lb scotch bonnet pepper, seeded & minced
1 teaspoon salt

Steps:

  • Heat oil in a medium saucepan over medium-low heat.
  • Add the garlic and cook until soft - about 1 minute.
  • Add the tomato and cook until soft - about 1 minute.
  • Add vinegar, peppers and salt and simmer for 2 minutes.
  • Transfer the mixture to a covered bowl and refrigerate for 2 days.
  • Strain mixture through a sieve; discard solids.
  • Store in an airtight container.
  • The hot sauce will keep in the refrigerator for 3 months.

I love this recipe but use with caution...warning VERY hot! Recipe is from one of my Caribbean cookbooks

1/4 c vegetable oil
2 clove garlic
1 large onion chopped
4 large tomatos peeled and seeded
2 scotch bonnet chiles seeded and minced
1 1/2 tsp oregano, fresh
1 tsp black pepper
c vinegar

Steps:

  • 1. Heat oil in skillet. Add the garlic and onion and saute until soft. Add the remaining ingredients except the vinegar. Cook for about 20 minutes until thick. Add the vinegar. Cook for 5 minutes longer and our into a sterilized jar and store in the refrigerator. use within 2-3 weeks.

Tips:

  • To make the Scotch bonnet sauce extra fiery, use Scotch bonnet peppers that are fully ripe and red. The redder the pepper, the hotter it will be.
  • If you don't have Scotch bonnet peppers, you can substitute habanero peppers. However, habanero peppers are much hotter than Scotch bonnet peppers, so use them sparingly.
  • Be careful when handling Scotch bonnet peppers. Wear gloves and avoid touching your eyes, nose, or mouth.
  • If you want a milder sauce, remove the seeds from the Scotch bonnet peppers before cooking them.
  • The Scotch bonnet sauce can be stored in an airtight container in the refrigerator for up to 2 weeks.
