1 cup sliced fresh carrots
1 tablespoon olive oil
1/2 teaspoon minced garlic
1 cup fresh broccoli florets
1 cup sliced yellow summer squash
1 cup chopped green pepper
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups chopped fresh plum tomatoes
Grated Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. , Meanwhile, in a large nonstick skillet, saute carrots in oil until crisp-tender. Add garlic; cook 1 minute longer. 1 (16 ounce) package uncooked tri-color spiral pasta
½ cup thinly sliced carrots
2 stalks celery, chopped
½ cup chopped green bell pepper
½ cup cucumber, peeled and thinly sliced
2 large tomatoes, diced
¼ cup chopped onion
2 (16 ounce) bottles Italian-style salad dressing
½ cup grated Parmesan cheese

Steps:

  • Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.
  • Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl.

2 large carrots, peeled and finely chopped
1 small red onion, finely chopped
2 large celery stalks, peeled and finely chopped
2 garlic cloves, crushed with the flat side of a large knife
1 cup torn fresh basil leaves
1 teaspoon crushed red pepper flakes
Coarse salt
1/2 cup dry white wine
2 small yellow summer squash, halved lengthwise and cut into 1/4-inch-thick half-moons
2 small zucchini, halved lengthwise and cut into 1/4-inch-thick half-moons
2 small eggplants, cut into 1/2-inch cubes
3 medium tomatoes, coarsely chopped
2 teaspoons chopped fresh marjoram
Freshly ground pepper
1 pound spaghetti or bucatini
Freshly grated Parmesan cheese, for serving

Steps:

  • Stir together the oil, carrots, onion, celery, and garlic in a large saucepan. Cook over medium-low heat 2 minutes. Add 1/2 cup basil, the red pepper flakes, and 1 teaspoon salt. Cover. Cook, stirring often, until vegetables are caramelized, about 15 minutes.

140g broccoli , cut into small florets
100g sugar snap pea , halved
2 courgettes , diced
1 tbsp olive oil
100g light cream cheese
50g grated parmesan (or vegetarian alternative), plus extra to serve
zest and juice 1 lemon
large handful basil

  • Cook the penne according to pack instructions, adding the broccoli florets and sugar snap peas to the pan for the final 3 mins.
