Time 20m

Yield 6 servings

Number Of Ingredients 6

Kosher salt
1 pound thin spaghetti
2 pounds beefsteak tomatoes (about 3 medium)
1/4 cup extra-virgin olive oil
1/4 cup fresh basil leaves, chopped, plus more for serving
8 ounces Brie, cut into 1/2-inch pieces

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions.
  • Meanwhile, grate the tomatoes on the largest holes of a box grater into a large bowl, discarding any big pieces of excess tomato skin. Whisk in the oil, basil and 2 teaspoons salt. Stir in the Brie.
  • Drain the pasta, reserving 1/4 cup of the pasta water. Add the pasta to the tomato mixture and toss to combine. Add the pasta water, a little at a time, to moisten the pasta and help the Brie partially melt, if needed.
  • Top with more basil before serving.

Yield Makes 6 (first-course) servings

Number Of Ingredients 7

1 (12-ounce) wedge Brie, rind removed, cheese cut into 1/2-inch cubes (about 2 cups)
1 (12-ounce) package grape or cherry tomatoes, each halved
1/2 cup quartered pitted Kalamata olives
2 large garlic cloves, minced
1/4 teaspoon (generous) dried crushed red pepper
1 cup (packed) fresh basil leaves, coarsely chopped, plus sprigs for garnish
3/4 pound rigatoni

Steps:

  • Off heat, place cheese, tomatoes, olives, garlic, and crushed red pepper in large skillet. Stir, separating cheese pieces. Mix in chopped basil.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup pasta cooking liquid.
  • Add hot pasta and 1/4 cup reserved pasta liquid to skillet with cheese mixture. Place over medium heat and toss until cheese is partially melted and sauce coats pasta, adding more reserved pasta liquid by tablespoonfuls if dry, about 5 minutes. Season pasta to taste with salt. Transfer to large shallow bowl. Garnish with basil sprigs and serve.

Tips:

  • Use fresh ingredients whenever possible, especially for the basil and brie. This will ensure the best flavor and texture.
  • Don't overcrowd the pan when cooking the fettuccine. This will prevent the pasta from cooking evenly.
  • Cook the pasta until it is al dente, or slightly firm to the bite. This will help it hold its shape and texture when tossed with the sauce.
  • Be careful not to overcook the sauce. It should be heated through, but not boiling.
  • If you don't have heavy cream, you can use milk instead. However, the sauce will be thinner.
  • Garnish the finished dish with fresh basil and cracked black pepper for extra flavor.

Conclusion:

This fettuccine with basil and brie is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The combination of flavors and textures is sure to please everyone at the table. So next time you're looking for a new pasta recipe, give this one a try. You won't be disappointed!
