1 (26 ounce) jar alfredo sauce (or make your own-I used a recipe that I got off of this site)
1 (4 ounce) jar marinated artichoke hearts, chopped roughly
3 boneless skinless chicken breasts (adjust according to your family size)
asiago cheese or parmesan cheese
1 cup half-and-half cream
1/2 cup butter
1/2 cup asiago cheese
1/2 cup parmesan cheese

Steps:

  • Cut away any excess fat from chicken, cube, and completely cook.
  • Prepare noodles according to package directions.
  • Drain artichoke hearts (no need to completely drain or rinse as the marinade adds a little to the alfredo sauce).

1 -2 tablespoon olive oil
1/2 lb mushroom (quartered)
1 -2 tablespoon green onion (chopped)
1 -2 garlic clove (minced)
1 lb fettuccine pasta
1/2 lb broccoli floret (chopped)
1 lb large shrimp (cleaned and cooked)
1 cup alfredo sauce (I use DiB's Olive Garden Garlic Alfredo Sauce)

Steps:

  • Chop veggies.
  • In a pan, heat oil to medium high heat. Saute mushrooms for about 5 minutes or until cooked. Place mushrooms in large serving bowl, leaving the oil in the pan.
  • Add onion and garlic. Reduce the heat to medium low to sweat the onions and garlic until tender. Also place in large serving bowl.
  • In a large pot of boiling salted water, cook pasta per directions. Add broccoli to boiling water for last 3-5 minutes. Drain and place pasta and broccoli into the serving bowl.
  • Add shrimp to warm mixture, and toss all ingredients together.
  • Top with Alfredo Sauce.

1 lb sea scallops
4 slices bacon
1 crushed garlic clove
1/4 cup white wine
1 cup alfredo sauce
1 pinch salt and pepper

Steps:

  • Start boiling the pasta.
  • Cook the bacon until crisp. Do not discard the bacon grease. Sprinkle the scallops with salt and pepper and add them to the pan with the bacon drippings. Sear them until they are a light brown color then remove them from the pan.
  • Add the garlic, wine, and Alfredo sauce to the same pan. Cook for about 2 minutes. Return the scallops to the pan and crumble bacon over them. Continue cooking for 2 more minutes.
  • Toss the fettuccine with the scallops and sauce and you're done.

1 lb stewing beef
1 (10 ounce) box frozen broccoli florets
1/2 cup butter
8 ounces cream cheese
8 ounces half-and-half
1/4 cup parmesan cheese
1 tablespoon garlic powder

  • Prepare the broccoli per packaged directions and set aside.
  • Brown the stew beef, cutting the larger pieces into smaller ones. Set aside.
  • Heat one gallon of water to a rolling boil and prepare the pasta per packaged directions.
  • For the Alfredo sauce, I used Grits-N-MS's wonderful recipe, #64196: melt the butter in a sauce pan.
  • Add cream cheese and whisk.

10 cloves garlic

½ cup nonfat milk
1 teaspoon cornstarch
2 tablespoons lowfat cream cheese

  • Combine 1 1/2 cup evaporated milk and garlic cloves in a pan, heat and simmer until garlic is soft (about 15-20 minutes). Milk will reduce a little.
  • In a blender, puree milk and garlic mixture with cream cheese until smooth.
  • Return mixture to pan and add 1/2 cup nonfat milk and cornstarch. Heat to simmer. Sauce will thicken slightly. Add 1/4 cup parmesan cheese.

2-8oz pkg cream cheese - chunked
2 pkg cremini mushrooms (cut into thirds)
2 stick butter - chunked
1 1/2 c parmesan cheese, plus extra for garnish
1 1/2 c whole milk
1 pkg fettuccini
1/2 tsp pepper
1/2 tsp salt
1/2 tsp garlic powder
ORIGINAL RECIPE FROM CROCK-POT ABOVE
5 lb chicken breasts, boneless and skinless--bite sized
2 pkg low-fat cream cheese-chunked
1 can(s) cream of mushroom soup
1 can(s) cream of onion soup
2 c 1/2% milk
1 pkg spinach, frozen (thawed & drained)
2 pkg regular sliced button mushrooms (fresh)
1 c parmesan cheese, fat-free
3 stick low-fat butter
2 pkg fettuccini
1 tsp pepper
1 tsp mrs. dash
1 Tbsp diced fresh garlic (from the jar is ok)
MY VARIATION ABOVE

Steps:

  • 1. Coat inside of a 3QT crock-pot with non-stick spray. Arrange chicken in single layer in the bottom. Top with mushrooms then sprinkle salt, pepper and garlic powder on top. Stir together cream cheese, butter, parmesan and milk in a medium saucepan over medium heat-whisking constantly till smooth and heated. Pour over mushrooms-cook 4-5 h. on low, 2-21/2 on high. Cook fettuccini in salted boiling water to package directions, drain well and add to alfredo sauce. Garnish with Parmesan cheese.
  • 2. Coat inside of a 5QT Crock-Pot with non-stick cooking spray and toss in chunked chicken bits. Turn Crock pot on low. Chuck in the mushrooms and top with Mrs. Dash, pepper, and fresh garlic. Top with lid and turn attention to a LARGE saucepan on medium heat. Stir together cream cheese and butter till soft and slightly melted, add whole 8oz can of parmesan cheese and stir (it'll look chunky) stir in both cans of soup. SLOWLY add in milk while whisking. (Sauce will be thick!) Bring sauce JUST to a boil, then immediately take it off the heat. Squeeze spinich dry and string it over the mushrooms. SLOWLY pour sauce over the spinich and cover. Cook 4-5 hours, stiring every now and again if you can to break apart chicken chunks. Serve sauce over pasta.
