PASTA WITH CHICKEN AND OLIVES
Make sure to get a great sear when you make this Pasta with Chicken and Olives. Use black and green olives for added flavor and interest and finish with your favorite herbs (I recommend parsley and rosemary). As a nice alternative, use whole pitted olives, serve the chicken.

Steps:
- Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
- Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
- Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
- Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
- Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.
CHICKEN & VEGETABLE FETTUCCINE
This is very simple to make when you have cooked a whole chicken and have leftovers. My boys always loved this comfort food, especially after a busy day of hockey! It's nice with a side salad and breadsticks.-Andrea Bergen, Altona, Manitoba

GARLIC LOVER'S FETTUCCINE WITH OLIVE OIL, GARLIC AND ZUCCHINI
Entered for safe-keeping. From Martha Rose Schulman's Fast Vegetarian Feasts, received in February 2009 Cookbook Swap. This is based on Italian Pasta Aglio e Olio (pasta with oil and garlic), adding zucchini that has been cut in matchsticks and briefly steamed, then tossed with the pasta and the oil, garlic, and Parmesan cheese. Although the author says 2-3 teaspoons of finely minced garlic is a lot, I would tend to add more, just because... DH and I love garlic.

Steps:
- Steam the zucchini 5 minutes and remove from the heat.
- Begin bringing water to a boil in a large pot for the pasta. (I would add a generous amount of grated sea salt to the water.).
- Meanwhile, heat the olive oil with the garlic in a small pan over very low heat. The garlic should simmer very gently, never turning brown, but just golden. (If it cooks too quickly, it will burn.) It should simmer for about 10 minutes. When it is golden and the oil aromatic, remove from the heat.
- Have a warmed serving dish ready.
- Cook the pasta al dente, and when it is done, spoon into the serving dish and toss with the oil and garlic, and the remaining ingredients.
- Serve at once, passing additional Parmesan cheese.
Tips:
- Use fresh, high-quality ingredients: This will make a big difference in the flavor of your dish.
- Don't overcook the chicken: Overcooked chicken is dry and tough. Cook it until it is cooked through, but still tender.
- Use a flavorful olive oil: The olive oil you use will add flavor to the dish, so choose one that you like the taste of.
- Add the olives and sun-dried tomatoes at the end of cooking: This will prevent them from becoming overcooked and losing their flavor.
- Season the dish to taste: Add salt, pepper, and other spices to taste until you are happy with the flavor.
Conclusion:
Fettuccine with chicken and olives is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of chicken, olives, and sun-dried tomatoes is flavorful and satisfying, and the creamy sauce is the perfect finishing touch. If you are looking for a new pasta dish to try, I highly recommend this one.
