CASARECCE PASTA ALLA PEPERONATA (SWEET PEPPER SAUCE)



Casarecce Pasta alla Peperonata (sweet pepper sauce) image

Stewed sweet peppers are the star of this Southern Italian peperonata pasta recipe. In Italy, this sauce can be served with pasta or as a side dish. It's simple to make and full of flavour.

400 g casarecce pasta ((14oz))
2 red sweet peppers ((bell peppers/capsicums))
2 yellow sweet peppers
2 orange sweet peppers
2 garlic cloves (peeled)
2 red onions (preferably from Tropea. Peeled and sliced)
1 handful cherry tomatoes (cut in half)
300 g tomato passata ((10 oz) I use Cirio or Mutti rustica)
1 bay leaf
3-4 tbsp extra virgin oilve oil
1 tbsp wine vinegar
salt (for pasta and to taste)
black pepper (to taste)
fresh basil or parsley (as required)
grated grana or Parmigiano Reggiano (as required)

Steps:

  • Wash and dry the peppers well,. Cut them in half lengthwise and remove the stalk with seeds and internal white filaments. Cut the peppers into smallish strips.
  • Wash the cherry tomatoes, dry them and cut them in half. Peel the onions and slice (not too finely). Peel the garlic.
  • Put the extra virgin olive oil into a deep frying pan or skillet and add the onions , garlic cloves and peppers. Cook over a medium heat until all the ingredients start to soften. Stir often.
  • Add the tomato passata, the cherry tomatoes, the bay leaf and wine vinegar, plus salt to taste. Mix everything together well and cook covered for 30-40 minutes over a low to medium heat. Stir occasionally. (some Italians cook it for longer but as a pasta sauce I think 40 minutes is more than enough)
  • While the pepper sauce is cooking, put a pot of water on to boil for the pasta. Add salt once it starts to boil and bring to the boil again. Cook the pasta al dente according to the instructions on the packet. Before draining the pasta save a cup of the cooking water.
  • Remove the bay leaf from the sauce. Add the drained pasta to the peperonata and mix together well. If the sauce seems dry add some of the pasta cooking water.
  • Serve immediately with a sprinkling of ground black pepper, chopped basil or parsley and grated cheese (if required)

1 pound fettuccine
2 tablespoons salted butter
2 tablespoons olive oil
6 multi-colored mini sweet peppers, sliced into rounds, a few rounds reserved for garnish
3 cloves garlic, minced
1 medium yellow onion, diced
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 poblano pepper, seeded and thinly sliced
1 jalapeno pepper, seeded and thinly sliced
Freshly ground black pepper
1/2 cup clear tequila
2 cups vegetable broth
1 cup heavy cream
3 tablespoons adobo sauce from canned chipotle peppers, plus more if needed
1/4 cup fresh cilantro, chopped

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions, then drain and set aside.
  • Meanwhile, in a large skillet, heat the butter and olive oil over medium-high heat. Add the mini sweet peppers, garlic, onion, red and orange bell peppers, poblano and jalapeno and season with a pinch of salt and pepper. Cook, stirring, until the onions and peppers begin to darken, about 3 minutes. Transfer the vegetables to a plate and set aside.
  • Return the skillet to the heat and allow it to come back up to temperature. Turn off the heat and pour in the tequila. Turn the heat back on and let it cook for 1 minute while scraping the bottom of the skillet to loosen any browned bits. Add the broth, bring to a simmer and simmer until reduced slightly, 3 to 5 minutes.
  • Reduce the heat to medium low and pour in the cream. Add the adobo sauce, stirring constantly. Cook until the sauce starts to thicken, another 4 to 5 minutes.
  • When the sauce is thick, add the vegetables to the skillet, making sure to include all the juices that have drained onto the plate. Stir and cook until the mixture is bubbly and hot, 1 to 2 minutes. Taste and add salt, pepper and/or adobo sauce if needed.
  • Add the drained pasta to the sauce and toss to combine. Transfer to bowls and garnish with fresh cilantro and a few reserved mini pepper rings.

350g trompetti or fusilli pasta
2 tsp olive oil
large onion , roughly chopped
2 plump garlic cloves , crushed
375g pickled cherry peppers or sliced peppers from a jar
85g packet rocket or watercress, roughly torn

Steps:

  • Cook the pasta according to pack instructions.
  • Meanwhile, heat the oil in a large pan, then fry the onion over a medium-high heat for 5-6 mins, stirring occasionally, until golden and softened. Stir in the garlic and cook for a further 2-3 mins. Drain the peppers, reserving their juice, then stir into the onion. Cook for 2-3 mins to heat through. Blitz the mixture in a food processor, with 75ml/2½fl oz reserved juice from the peppers and 75ml/2½fl oz cooking liquid from the pasta, to make a chunky sauce.
  • Drain the pasta and return it to the pan. Add the pepper mixture, then season to taste. Toss with the rocket or watercress while still hot, so it just begins to wilt, then serve.

Steps:

  • In a small skillet cook the garlic, the onion, the red pepper flakes, the thyme, and salt and pepper to taste in the oil over moderately low heat, stirring, until the onion is softened, add the bell peppers and the broth, and simmer the mixture, covered, for 10 minutes, or until the peppers are very soft. In a blender purée the mixture until it is smooth, return it to the skillet, and swirl in the butter. Stir in the basil, the lemon juice, and salt and pepper to taste and keep the sauce warm.
  • In a kettle of boiling salted water cook the fettuccine until it is al dente, drain it well, and transfer it to a serving bowl. Add the sauce, toss the pasta well, and serve it with the Parmesan.

1 large sweet red pepper
1 small red onion, about 1/4 pound
1 ripe red tomato, about 1/4 pound
1 teaspoon finely chopped hot green pepper or 1/4 teaspoon hot dried red pepper flakes
1 tablespoon Dijon-style mustard
3 tablespoons red-wine vinegar
1/2 cup olive oil
2 teaspoons finely minced garlic
1/2 cup coarsely chopped chervil or half that amount of chopped parsley

Steps:

  • Using a long fork, hold the red pepper directly over a gas flame or close to the heating element of a preheated electric broiler. Cook, turning it often so that it blisters and blackens all over - top, bottom and sides.
  • Let stand until cool enough to hold, and rinse thoroughly under cold tap water, peeling off the burned outer skin. Cut the pepper flesh into 1-inch pieces. There should be about 3/4 cup.
  • Cut the onion into 1/4-inch cubes. There should be about 3/4 cup.
  • Cut the tomato into 1/2-inch cubes. There should be about 3/4 cup.
  • Put the tomato, sweet pepper, onion, hot pepper, mustard, vinegar, oil, garlic and chervil in the container of a food processor. Blend thoroughly.

3/4 tsp cayenne pepper
1 c light sour cream
3/4 c chicken broth
3/4 c grated parmesan cheese

  • 1. Cook pasta as directed, drain, keep warm. Spray a lg skillet w/ cooking spray, place over medium heat.

1 medium onion, chopped
2 large garlic cloves, green shoots removed, minced
1 1/2 pounds red peppers, cut in large dice
1 1/4 to 1 1/2 pounds tomatoes, cut in wedges
1 sprig fresh basil

freshly ground pepper to taste
1 pound spaghetti
Freshly grated Parmesan or ricotta salata for serving

Steps:

  • Heat the oil in a large nonstick skillet or heavy casserole over medium heat. Add the onion. Cook, stirring, until tender, about five minutes, and add the garlic and peppers. Add a generous pinch of salt, and cook, stirring often, until the peppers have softened, about 10 minutes.
  • Add the tomatoes, basil sprig, salt and pepper, and bring to a simmer. Simmer, stirring from time to time, until the tomatoes have cooked down somewhat, about 10 minutes. Cover, reduce the heat and simmer another 15 to 20 minutes (or longer), stirring occasionally until the mixture is thick and fragrant. Taste and adjust seasonings.
  • Remove the basil sprig, and put the peppers and tomatoes through the fine blade of a food mill, or puree in a food processor and press through a strainer. Return to the pan, and keep the sauce warm while you cook the pasta.
  • Bring a large pot of water to a boil. Salt generously, and add the pasta. Cook al dente, following the timing instructions on the package but checking a minute before the indicated cooking time. Stir 1/4 to 1/2 cup of the pasta cooking water into the sauce, then drain the pasta and toss with the sauce. Serve with Parmesan or grated ricotta salata.
